Alllllrighty. Happy Friday, friends! The weekend has arrived once again. Let’s get down to business and talk black bean soup! The BEST vegan black bean soup to be specific.

I get it. Black bean soup is not exactly a revolutionary recipe. Nothing crazy or super out of the box here. But this one is very good. I wouldn’t call it the best if I didn’t mean it.

Of course that is just my opinion but we’ve been doing this long enough that I think you’ve got some level of trust in me 😉

I’ve been making this soup sort of on the fly for the last handful of years and it never gets old. Always quick, easy, healthy and filling! Basically everything you could ever want from a black bean soup.

And now, I’ve got good news and I’ve got bad news.

I would ask you which one you want first, but since we can’t really do that I’m just gonna go good news first.

Good news: you can make the best vegan black bean soup for your people after reading this post!

The bad news: These pictures kind of make me cringe. But I’m hoping you guys have a more forgiving opinion of my photography than I do. Or at least don’t judge the quality of my recipes by the quality of my photographs 😝

Mango Coconut Smoothie with Turmeric and Lime {paleo + vegan}

This mango coconut smoothie with turmeric and lime is not too sweet, but slightly floral and aromatic from the perfectly ripe mango, a bright clean layer of flavor from all that fresh lime juice that wakes up your taste buds, a little tropical creamy thing happening thanks to the coconut milk, and some anti-inflammatory love for your bod from the bold and vibrant turmeric.

Even though the first day of fall is literally right around the corner, I’ll still start some of my mornings with healthy and vibrant smoothies. Plus, sometimes as the days grow shorter it helps a little bit to have something that looks (and tastes) like sunshine in your glass 😉

Late Summer Frittata with Tomatoes and Fresh Herbs {paleo + vegetarian}

This late summer frittata with tomatoes and fresh herbs has been my go-to egg dish pretty much since it’s been warm enough to wear sandals! Made with good-for-you pasture raised eggs, ripe summer tomatoes, savory caramelized shallots, spinach, and fresh parsley for some seriously delicious flavor – it’s a must try!

There is something so satisfying about a good frittata. First of all, it doesn’t really belong to a specific time of day, making it equally as delicious for breakfast as it is for dinner. Secondly, it’s one of the few things you can usually pull together for a super meal when all you have are some eggs and a few stray veggies (okay and also maybe a little cheese 😉) in the refrigerator.

Pair it with a big green salad for dinner or grab it on your way out the door in the morning and you are 100% doing the whole frittata thing right.
