Well, helllloooo! And happy 2019!

Wow. Always weird to say the number of the new year. It’s kind of cliche but it always sneaks up on me! I’m thinking we should embrace it with this yummy & easy dinner recipe because:

your 2019 needs this easy paleo teriyaki salmon.

 

It’s my favorite meal that I’ve made these past couple of months, and I foresee it coming back again and again in our weekly meal plan for three reasons:

  1. This salmon recipe is super easy to make – most of the cook time is hands off.
  2. It’s also crazy healthy and free from all the inflammatory ingredients that usually gunk up a standard teriyaki sauce.
  3. SO YUMMY. Like so much flavor. With just the right sticky texture and a sweet to salty ratio that will keep you coming back for bite after bite. (The first time I made this recipe, my husband and I didn’t even bother eating off of plates. Literally devoured a whole batch straight off of the baking sheet. Savage I know, but don’t judge until you try this salmon for yourself! 😜)

I figured why not get the year started with a dinner that says: 2019, we are HERE – with some crazy delicious food in tow 💯

Food that is the equivalent of a power pose meal. Strong, bold, and good for your self confidence 😉

But mostly – how good could coffee with butter and coconut oil even BE?!

Well my friends, after taking a big deep dive into the world of bulletproof coffee (or boosted coffee, as some call it) I’m so very happy to report that when you make it right, it is indeed very, very good, and not at all hard to make.

Twice Baked Garlic Parmesan Sweet Potato Casserole {gluten free + paleo option}

Ohhh the classic sweet potato casserole. Many Thanksgiving tables would not feel complete without it.

But we’re gonna do it a little different this time and take the savory route. As everyone who has ever sat down to a traditional Thanksgiving table knows, typically the sweet potato side dish leans toward the sweeter side of the flavor spectrum. Ingredients like maple syrup, pecans, marshmallows (no offense but I just can’t with that last one), are the usual suspects.

This recipe swaps those sweet ingredients out for more savory, punchy ones like parmesan cheese and roasted garlic. And because you still have the natural sweetness of the sweet potato you end up with a dish that hits every single note on your palate. <– YES!

If you want you can call me a rule breaker, but I’m gonna be a rule breaker taking giant bites of this delicious twice baked garlic parmesan sweet potato casserole, so I ain’t made about it 😉
