My husband, myself, and a big group of friends recently went on a special trip to Jamaica to see our favorite band play music on the beach – it was a once in a lifetime experience.

One thing that stuck with me from our time there was everyone’s appreciation of the importance of water.

EVERY TIME I filled up my water bottle at the resorts water station, one of the nearby employees would say to me “water is life!”. And not in a cheesy way like it was something they were supposed to say. It was more of like a genuine recognition that hey – that stuff is pure GOLD, and it deserves to be honored.

So besides taking home some seriously amazing memories, I also took back with me that reverence and appreciation for water. Drinking enough water is literally one of the best and easiest things that we can do for our health, and is sometimes so undervalued. Maybe because of the simplicity of it? Or that it’s kind of boring? I’m not sure, but whatever the reason, I’m doing my best to combat the boring and have gratitude for my access to clean water and the power that is has for health wellbeing.

I know that seems a little off topic but water really is life, and the base of this smoothie is water, so… the topics are kind of related? And definitely important. Thanks for hearing me out 😉

Winter can be kind of a strange time of year for smoothies. I definitely don’t drink as many during the colder months of the year as I do during the summer, but sometimes it’s nice to blend up some of the best that the season has to offer and sip a vibrant, glowing cup of healthy goodness.

In the case of this beet and berry smoothie the ingredients are pretty basic, but the flavor is definitely not. It’s made with raw beets, mixed berries, some whole citrus fruit (which is better for your blood sugar than straight up orange juice!), a little banana for added sweetness (you could substitute some cauliflower rice for a less sweet / lower carb option), and WATER! Because, well you know… 👅

The result? A STUNNING smoothie that is bursting with juicy flavor and a color so gorgeous that it’s worth drinking for that reason alone.

Also, we all know that bright colors in fruits and veggies = lots of nutrients, and this beet and berry smoothie is no exception.

The ingredients are packed with anti-oxidants, vitamin C, potassium, folate, and fiber – which are all great in supporting our system during the cold and flu burdened winter months.

If you don’t have a high speed blender you may want to chop your beet up very small or grate it before adding to the blender so you have an easier time blending it up. My vitamix handles it like a boss but some other models may have a harder time with such a dense vegetable.

Description

This beet and berry smoothie is made with 5 healthy & vibrant ingredients that will make you glow from the inside out. Vegan, paleo friendly, and whole30 compliant – it’s a crazy delicious way to start your day with a healthy dose of both fruit and veggies!


Ingredients

  • 1 banana
  • 1 orange, peeled
  • 1 cup of mixed berries
  • 1 small beet, trimmed, peeled, and cut into quarters (grate or chop very fine if you don’t have a high speed blender)
  • 1 1/2 cups of water 

Instructions

  1. Add all ingredients to your blender and blend on high until smooth.
  2. Pour into two glasses and enjoy!

Notes

  • For an colder / more “frozen” smoothie add a few ice cubes before blending!
  • For a little extra fiber + omega 3 fatty acids you can add a teaspoon or so of flax or chia seeds!
