friends, fast and easy romesco sauce is here to do just that.
for all of you sauce loving readers out there:
this one’s for you.
it’s so good that it has been finding it’s way into almost everything I’ve made for the last 2 weeks. I’ll share those awesome reasons to whip up a batch of this in a minute, but first:
I’m going to back up a bit here and say that this romesco sauce was LITERALLY the magic sauce that got my creative vibes moving again. there were a couple weeks a while back when my inspiration was just running…dry. every time I would search my head for something that I wanted to make and share with you I just came up with NOTHING! no bueno, frustrating, and a bit discouraging.
but then I realized that every person who has ever sought out a creative venture can relate to this. sometimes it just, happens – and when it does we have to kind of take it easy on ourselves, because our best work definitely doesn’t come when we’re being too hard on ourselves. we have to take a deep breath and reconnect with the things that inspired us in the first place.
“To be creative means to be in love with life. You can be creative only if you love life enough that you want to enhance its beauty, you want to bring a little more music to it, a little more poetry to it, a little more dance to it.”
for me that meant digging into my pile of cookbooks, visiting my favorite food blogs, and finally tucking myself into the stack of bon appetit mags that has been growing on my counter. that’s when I found the recipe for this romesco sauce. bright, easy, vibrant and full of healthy things, it caught my eye right away. I tweaked a couple things, took a taste and… fell. in. love.
and there’s a lot to love: it’s loaded with vegetables, healthy fats and bold spices – roasted red peppers, tomato paste, parsley, almonds, olive oil, paprika and cayenne pepper. and, bonus – it’s also vegan!
AND there’s so many delicious things we could do with this sauce!!!
- stir it into a little bit of mayo + spread it on crusty bread for an ah-mazing sandwich spread
- mix it into plain yogurt for a mouth watering taco topping
- heat it gently + stir in cream + a bit of parmesan for a super lush pasta/fried gnocchi sauce (been there, done that, SO GOOD!!)
- one more awesome topping for those breakfast tacos that we all know and LOVE 😍
- served alongside some roasted chicken for a phenomenal dipping sauce
- straight up chip dip! boo-ya.
let’s just say the options are limited only by your imagination. this is one of those sauces that fits perfectly into the make-it-on-the-weekend-and-eat-it-all-week category…for lack of a better term 😉

fast and easy romesco sauce – a flavor packed, versatile sauce packed with roasted red peppers, almonds, garlic, olive oil, parsley and smoked paprika. a brilliant way to add that extra something special to your savory dishes!
- 2 large roasted red bell peppers from a jar
- 1/2 cup whole roasted almonds
- 2 tbs tomato paste
- 2 1/2 tbs red wine vinegar
- 2 tbs fresh parsley
- 1 clove garlic
- 1 tsp paprika
- 1/2 tap cayenne
- 1/2 cup olive oil
- 1 1/2 tsp salt
- black pepper
Add all ingredients to food processor except olive oil and pulse until fairly well combined. With the motor running, add oil in a steady stream until emulsified and almost smooth. Taste and adjust seasoning if necessary!
