I’m not gonna lie. Discovering how to make bulletproof coffee AT HOME was nothing short of a life changing experience for me.

I had tried it a few times and heard people talk about it for a long time before I made it myself, because somehow it seemed intimidating. Every time I even THOUGHT about making it myself I ended up with more questions than answers.

What even IS bulletproof coffee?

Is bulletproof coffee good for you?

Can you make it hot AND cold?

Do you need a blender to make it?

Is it sweet? Not sweet?

How do you make it so creamy?

What does it taste like?

But mostly – how good could coffee with butter and coconut oil even BE?!

Well my friends, after taking a big deep dive into the world of bulletproof coffee (or boosted coffee, as some call it) I’m so very happy to report that when you make it right, it is indeed very, very good, and not at all hard to make.

This recipe is the second in a line up of Thanksgiving recipes that I have coming at you over the next week or so. It’s one of my favorite’s of the bunch and it fits perfectly with the blog post from last week for whipped parsnips with fresh herbs – because if a delicious and flavorful mushroom gravy belongs anywhere it’s on top of a pile of whipped parsnips or mashed potatoes 😍

This dish, like a lot of the comfort food recipes I share here on NK, reminds me so much of my grandma. She was a 4’11” queen of the kitchen – particularly when it came to comfort foods like a delicious gravy, a tender roast, or a warm and filling stew.

She was my first teacher in the kitchen – patient, kind and oh-so-good at making food taste freaking delicious.

Okay all you sauce loving readers of mine, this one’s for you.

A perfect 5 minute paleo green onion and cilantro sauce for you to put on EVERYTHING.

I’ve said this before, and I’ll say it again (and again, and again… 😜) NEVER UNDERESTIMATE THE POWER OF A GOOD SAUCE. It can literally take a meal from pretty okay to out-of-this-world amazing.

This green onion and cilantro loaded sauce has been on a very steady rotation in our house for at least the past 4 months.

I think I first made it at work on a whim and then made it again and again at home and beyond.

It sat in on an impromptu post-moving-day dinner with friends and turned our simple cast iron seared tri-tip steak into something super special and yummy. Has been poured over a pile of buckwheat soba noodles many times, and also marinated some crisp cucumber slices to crunchy tangy perfection (more on that one, in another post! 😉)
