I mean, how excited would you be about dinner tonight if this ⬆️ is what you were coming home to?

Especially if it’s as easy as forming some patties, seasoning ’em, searing ’em and loading ’em up with your favorite toppings.

There’s something about a burger that is so dang comforting and familiar. Perfect October food. Esp when the rain is coming down like it has been in Seattle. Gray skies are in full effect around here.

I have to say – I reaaaally really missed burgers when I gave up gluten and transitioned to a mostly paleo diet.

Obviously there’s gluten free (and even grain free) bun options out there for those who can no longer enjoy fluffy brioche rolls – (😭 yes I do still mourn the loss of these foods from time to time! I think that’s perfectly okay, and even healthy. Recognizing the weight of the thing that you’re giving up for health benefits has the ability to further strengthen your resolve and commitment to your positive lifestyle choices! They definitely have the ability to exist simultaneously and work in direct relation to each other), but it did take me awhile to find the same joy in them as I used to find in a classic OG burger.

Occasionally I do splurge in the gluten free bread option for a burger, but more often than not, I choose the bunless or lettuce wrapped option. I just FEEL better when I don’t have all those carbs added to an already indulgent meal.

This ultimate bunless burger = all the flavors of a classic burger and none of that heavy stomach feeling that can really weigh you down


AKA a guilt free win/win.

And now I’m here to tell you that this bunless burger will rescue you from any remaining bun-missing feels.

And that you can easily make it at home.

Well HELLO, my loves! I’m still here!

I haven’t fallen off a cliff or moved to the middle of nowhere with no internet I PROMISE.

Just took a break from blog land for a little while. But I did miss you, and I have to admit I have that guilty feeling in my stomach that I get when I haven’t called my mother in waaay too long. I know we’ve all been there. Maybe we can make it right with by sitting down with this some of these mango chorizo taco salad bowls with green sauce. Anything topped with green sauce usually makes things right.

This past two weeks gave me a chance to do something that had been missing for awhile – time to re-connect with myself, Patrick, friends, aaaand my inner wild child (<< all very important things, you know?)

Galavanting around to the soundtrack of our favorite bands was so fulfilling and just the kind of magic that I needed to feel like I had really had a SUMMER. Sitting inside every day on a computer and then going inside to work at the restaurants was starting to feel too predictable and even a little stifling.

Just the very fact of not picking up my cell phone for FIVE DAYS STRAIGHT was incredibly liberating, and really put me back in touch with the person that I am without all the filters and perfectly edited captions. I felt soooo much love surround me in the last two weeks and it was pure, raw, maybe-haven’t showered-in-a-little-too-long Nyssa, and it was so affirming and self realizing.

It sounds a little cliche, but summer festival season always fills up my heart and soul in a way that nothing else can, and this year did not disappoint. But I do have to admit that this mango chorizo taco salad bowl with green sauce is a pretty great thing to come home to, and I hope you’ll think so too.

even though the pictures of you are kind of blurry because it’s february and there is practically ZERO light coming through my window even at high noon. more like dark noon. *grumble grumble*

the lighting issue.

it really is getting better as we begin to eek our way out of the short winter days, but it’s been a challenge for sure. I do use artificial lights sometimes but it just doesn’t have that same oomph as really good natural light. I think if you’ve ever played around with a camera you know what I mean.

this past weekend though!? I made a bunch of delicious things and had lots of lovely light pouring in through the windows with which to photograph those delicious things (yay sun!) and I can’t wait to share them with you.

but for now what I really need to do is convince you to make this amazing soup. because it is kind of the best thing EVER and it will totally brighten your day. it’s super satisfying and it has been sitting in my inbox for more than is an appropriate amount of time for something this yummy to sit in my inbox! (sorry not sorry because, here you go!)
