Summer is here and I am SO pumped! It’s my favorite time of year in the PNW and we are celebrating with some creamy strawberry coconut milk popsicles!
Although it was a little rainy during the week leading up to the summer solstice in Seattle, we’ve been lucky and the weather has been decidedly summery for most of June.
I have z-e-r-o complaints.
Many days it’s been straight up sweltering in our house because air conditioning is just NOT a thing in the PNW. If you know, you know.
We’ve been cooling down with:
- Patio dinners – because food just tastes better outside!
- EVERY window open – does it get any better than a breeze through an open window on a hot summer day?
- All the frozen things – Frankie and Jo’s, frozen drinks like this turmeric slushy, and these deee-licious summery strawberry coconut milk popsicles!
I guess I am on a strawberry + coconut milk kick!
After making those strawberry coconut milkshakes for last week’s post I got to thinking.. I bet these would actually make pretty good popsicles. And you know what?
100% YES.
They are so, so, yummy y’all.
There’s something about the combo of tart and sweet berries blended with super creamy coconut milk that just IS summer vibes!
How to make summery strawberry coconut milk popsicles
All you need you need besides a few simple ingredients is a blender and a popsicle mold!
You can check out the popsicle mold that I use here. It’s less than $10 and makes 10 popsicles which is the perfect amount for a solid freezer stash of icy treats. I’ve had it for several years and it’s held up well!
The popsicle ingredients are blended together in two parts:
- A creamy strawberry base: made with blended coconut milk, fresh strawberries, vanilla, and a little bit of maple syrup
- A fresh strawberry ripple: made with fresh strawberries, maple syrup, and bright lemon juice. This mixture is layered and swirled into the popsicles for a bright pop of strawberry flavor!
Ingredients for these popsicles
These popsicles are actually made with mostly the same ingredients in the strawberry coconut milk shake recipe I shared last week.
The ingredients for these popsicles are:
- Fresh strawberries (or frozen strawberries that have been thawed – by thawing before you blend, the mixture will be easier to pour into the popsicle molds)
- Full fat coconut milk
- Vanilla
- Maple syrup
- Lemon juice
A few notes on the recipe
- I have only made the recipe using fresh strawberries, but you could thaw out some frozen berries and measure them out after they’re thawed. By thawing them before you make the popsicle mixture it will be much easier to pour into the popsicle mold.
- If you want to simplify the recipe – skip the fresh strawberry ripple and just make popsicles from the creamy strawberry + coconut milk base.
- Depending on the size of your popsicle molds you may have a little bit of extra strawberry mixture! Save it in your fridge to make another popsicle or two once the first batch is frozen, or use it in your morning smoothie. You could also mix in some chia chia seeds and make a creamy strawberry chia seed pudding!
- This recipe could also be made with another type of berry, or even cherries! Raspberries, blueberries, and blackberries would all be fantastic.
Summery Dairy Free Strawberry Coconut Milk Popsicles

These summery strawberry coconut milk popsicles made with fresh strawberries and creamy coconut milk are super easy to make and FULL of fresh strawberry flavor! A real fruit popsicle that is made for hot days – creamy, lightly sweetened, and oh so delicious!
Ingredients
Creamy strawberry base
- 1 1/2 cups fresh strawberries, trimmed and halved
- 13.5 oz can full fat coconut milk
- 1 tablespoon lemon juice
- 4 tablespoons maple syrup
- 1 teaspoon vanilla
- pinch of sea salt
Fresh strawberry ripple
- 1 1/2 cups fresh strawberries, trimmed and halved
- 2 tablespoons maple syrup
- 1 tablespoon lemon juice
- pinch of sea salt
Instructions
- Blend all of the ingredients for the creamy strawberry base together until smooth and creamy.
- Pour mixture into a glass pyrex measuring cup, or another vessel that is easy to pour from.
- Rinse out your blender and add all ingredients for the fresh strawberry ripple. Blend together until mostly smooth – a few little chunks of strawberries are fine!
- Layer the creamy strawberry base and the fresh strawberry ripple in popsicle molds until full. Add popsicle sticks and freeze until solid.
- ENJOY!

I made this recipe with only the first part as I didn’t have enough strawberries on hand for the swirl. Instead of popsicles I used mini silicone molds for bite-sized summer treats and they were amazing! Thanks for this recipe!

The way the ingredients are written out is confusing to me. it looks like you have one 13 1/2 ounce can of coconut milk is it one and a half cups or 1/2 cup serving of fresh strawberries?
