The best homemade sweet potato fries
Making sweet potato fries at home is a whole new level of awesome.
I’ve tried a handful of different methods over the years and this has turned out to be my favorite. They’re not coated with anything (made without cornstarch), and not deep fried.
They’re just made with sweet potatoes, oil, and spices, so you’ll roast them at a high temperature until tender on the inside, slightly charred, and crisp on the edges. Yum!
And they’re ready in less than 30 minutes!

Ingredients and substitutions
These healthy oven roasted sweet potato fries are made with just a few simple ingredients that you probably already have hanging around your pantry.
Here’s what you need for the sweet potato fries
- Sweet potatoes – I used red garnet sweet potatoes (also sometimes called yams) for this recipe, but you could substitute with another type of sweet potato.
- A simple spice blend – Garlic powder, onion powder, paprika, salt and pepper make the best seasoning for sweet potato fries. Feel free to adjust the spices based on your preference.
- Avocado oil – Because these sweet potatoes roast at such a high temperature, you’ll want to use a fat that is safe for high heat. Avocado oil is a great choice because it’s liquid at room temp and easily coats the fries.
And every delicious sweet potato fry deserves an equally delicious sauce to dip them in, so of course I had to include a recipe for our favorite easy garlic aioli!
Here’s what you need for the dipping sauce
- Mayonnaise – Avocado oil mayo is a great Whole30 compatible option.
- Garlic – 1 clove of grated or finely chopped garlic adds some savory aromatic flavor.
- Grainy mustard – Grainy mustard or whole grain mustard mixed with the mayo is *chefs kiss*. For a Whole30 option make sure there’s no wine, sugar, or gluten in the ingredient list.
- Lemon juice – Fresh lemon juice adds acidity and perks up the flavors.
- Salt and pepper – To taste.
Should you peel your sweet potatoes for sweet potato fries?
I actually don’t recommend it. Because the sweet potato fries are thinly cut and roasted in the oven instead of frying, the skin helps them maintain their shape and crisp up nicely.
If you peel them, they may end up on the softer side and fall apart more easily.
As long as the skin looks fairly blemish free and you give them a good wash you’re totally good to eat them with the skin on! It even adds extra fiber and nutrients.
How to cut sweet potatoes for fries
The best and easiest way to cut sweet potatoes for fries is to cut them into 1/4 thick planks, and then slice each plank into thin strips. About 1/4 – 1/3 of an inch thick, as pictured below.
How to make baked sweet potato fries
Besides only needing a few simple ingredients, it also only takes a few simple steps to make these yummy sweet potato fries at home.
Here’s the step-by-step
- Preheat the oven to 475 degrees F and move the rack to the center. For easy clean up, line your baking sheet with parchment paper.
- Prep sweet potatoes. Wash sweet potatoes well and cut into long 1/4 inch thick sticks. Transfer to the lined baking sheet and toss to thoroughly combine with avocado oil and all the spices. Spread out in a single layer on the baking sheet so that the fries are not overlapping or touching each other as much as possible. I used a full-sized baking sheet like this one (26-by-18-inches). If all you have is a half-size baking sheet (18-by-13-inches) you will want to bake them in two batches or cut the recipe in half. This will allow them to get crispy on all sides. I cover some measurements for making a half batch in the section below.
- Bake. Move to the oven and bake for 10 minutes. Take out and rotate the pan. Move back to the oven and bake for another 5-8 minutes – until crispy all over.
- Serve hot with your favorite dipping sauce! We like to sprinkle a little extra flaky salt over the top before digging in.
How to make a half batch
As written, this recipe is enough for 4 generous servings of sweet potato fries. If you don’t need that many, or have a smaller baking sheet you can easily make a half batch.
To make sure the fries get crispy I don’t recommend making the full batch on a half size baking sheet. The fries won’t have enough room and will end up overlapping, which is what you don’t want when you’re after crispy fries.
You can either bake the full recipe in two separate batches or cut the recipe in half. Half a recipe will still make 2 generous servings of fries.
Here are the measurements for a half batch:
- 1 medium sweet potato, about 3/4 pound
- 1 1/2 tablespoons avocado oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/8 teaspoon black pepper
- 1/4 teaspoon paprika
Proceed with the recipe as written for a half batch the same as you would for a full batch.
How long to bake sweet potato fries
At 475 degrees F these sweet potatoes take about 15-18 minutes in the oven.
At this temperature they will come out slightly charred and crisp on the edges. If you want them to be less charred I would recommend reducing the heat to 450 degrees F and roasting for a little longer, until done to your liking.
What to serve with sweet potato fries
These healthy oven baked fries make the best snack or side dish to serve with burgers, sandwiches, or a simple protein like chicken or steak!
We love them with these bunless burgers, and lots of dipping sauce.
How to reheat
To reheat these fries all you need to do is pop them back in the oven for a few minutes at 400 degrees F.
You could also warm them up in a toaster oven.
If warming in the microwave, they will lose most of their crispiness.

Hi Carol! I usually use garnet or jewel sweet potatoes (also labeled yams!) but you could also use a white or Japanese sweet potato variety. Those actually tend to be a little less moist and will therefore crisp up a bit more. If you can find Hannah white sweet potatoes they make excellent crispy fries!
