It’s Friday!! Which means it’s time to kick off those old work shoes, put that bottle of rosé on ice (or two), invite some friends over, and whip up a batch of this vegan and paleo pimiento cashew cheese dip for dipping ALL THE THINGS! 😍
I don’t know about you guys, but I’m in the camp of “delicious dips are life”.
In case you want to know the exact order of where my love for delicious dips falls, it goes something like this:

I’m not sure where the idea to make a pimiento cashew cheese dip came from (cuz really?! Pimiento cheese?! It’s been a loooong time since I’ve thought about that). But I think it started with a container of glistening spicy cherry peppers calling out to me at our natural foods store. Sometimes one single ingredient can be such an inspiration!
And as all the sunshine starts to inch closer and more friend and family gatherings fill our calendars, why not dream up some nutrient dense snacks that we can feel good about sharing with the one’s we love the most?
It’s the week of Cinco de Mayo which means… TACOS at our house (I bet I’m not the only one 😉!) More specifically we’ve been enjoying these spicy thai marinated skirt steak tacos with avocado. So satisfying and so loaded with delicious flavor!
Beyond it being Cinco de Mayo, it also happens to be the week of my sweetie’s birthday, and his love of Mexican food and the fact that it falls around Cinco de Mayo usually means mexican themed eats for his party.
So this last weekend while we celebrated there were tacos and a chopped salad with cilantro chipotle ranch. We drank lots of these margaritasfrom last week’s post, devoured a giant bowl of guacamole and dove head first into some mega spicy aguachile – a dish that I discovered on my recent trip to Mexico. It’s basically a super spicy, cilantro loaded shrimp ceviche. When I tried it for the first time I almost did a backflip! It was so good I’m seriously considering sharing my recipe for it with you here soon.
But I’m totally getting ahead of myself. Back to these spicy thai marinated skirt steak tacos with avocado!
When I made these best ever paleo curried pork meatballs last week, I had no idea I was gonna fall this hard.
Talk about food-crush! These babies are pretty near perfect. Just the right amount of spice and flavor that’s nicely mellowed out with a healthy dose of full fat coconut milk. They’re tender yet sturdy enough that they hold up to the curry sauce, and packed with flavorful ingredients like fresh cilantro, garam masala spice, onion and ginger.
It’s enough to make me want to jump up and down and tell you just how much I love ’em. Which is, I guess, kinda what I’m doing 🙂
