Tangled crunchy veggies. Perfectly pan seared shrimp. Spicy mayo, avocado, or both! A salty and slightly tangy dipping sauce to go with it. Yes yes and yes.

Every time I eat collard green wraps I always feel this major blast from the past – memories of collard wraps filled with greens and sliced fresh veggies, salads, cashew “cheese”, sprouted seed crackers and a dehydrator running 24/7 in our little apartment run through my head.

You see, shortly after starting college I started eating a vegetarian diet, which quickly transitioned to eating vegan, which then led me down the exploratory path of eating a 100% raw vegan diet. It lasted just shy of a month, after which I realized it wasn’t exaaactly the right fit for me. I found my energy levels to be majorly lacking and after eating an enormous meal, I still didn’t feel satisfied or full. Not good things!

But since every experience gives us the opportunity to learn something about ourselves or the world we live in, I did gain some really valuable skills in preparing and incorporating raw foods into my every day eating habits. And it also taught me the priceless lesson to listen to my body’s signals for what works for, and what works against my health. It was shortly after this little venture into raw foodism that I did a complete 180 and started consuming meat and animal products again, but this time with more intention. Choosing pastured and organic animal products, knowing where they came from, how they were processed and how MUCH of them I was eating.

And of course my journey toward optimal health was not over at that point – and I don’t think it ever will be. Our bodies are constantly changing, requiring new types of attention and nourishment + we are always within that feedback loop of taking care of ourselves the best way we know how, reading the information our bodies send back to us and adjusting as we go. It’s kind of a really cool thing if you tune into it.

paleo pimiento cashew cheese dip {vegan + paleo}

It’s Friday!! Which means it’s time to kick off those old work shoes, put that bottle of rosé on ice (or two), invite some friends over, and whip up a batch of this vegan and paleo pimiento cashew cheese dip for dipping ALL THE THINGS! 😍

Paleo pimiento cashew cheese dip with fresh veggies for dipping is the perfect whole food + dairy free swap for a southern classic!

I don’t know about you guys, but I’m in the camp of “delicious dips are life”.

In case you want to know the exact order of where my love for delicious dips falls, it goes something like this:

  1. My family and friends
  2. My cat
  3. Delicious dips

Yep. That list looks about right 😉

I’m not sure where the idea to make a pimiento cashew cheese dip came from (cuz really?! Pimiento cheese?! It’s been a loooong time since I’ve thought about that). But I think it started with a container of glistening spicy cherry peppers calling out to me at our natural foods store. Sometimes one single ingredient can be such an inspiration!

And as all the sunshine starts to inch closer and more friend and family gatherings fill our calendars, why not dream up some nutrient dense snacks that we can feel good about sharing with the one’s we love the most?

spicy thai marinated skirt steak tacos with avocado {paleo}

It’s the week of Cinco de Mayo which means… TACOS at our house (I bet I’m not the only one 😉!) More specifically we’ve been enjoying these spicy thai marinated skirt steak tacos with avocado. So satisfying and so loaded with delicious flavor!

Spicy thai marinated skirt steak tacos and avocado are super bold and umami packed paleo friendly tacos that are super versatile and easy to make!

Beyond it being Cinco de Mayo, it also happens to be the week of my sweetie’s birthday, and his love of Mexican food and the fact that it falls around Cinco de Mayo usually means mexican themed eats for his party.

So this last weekend while we celebrated there were tacos and a chopped salad with cilantro chipotle ranch. We drank lots of these margaritas from last week’s post, devoured a giant bowl of guacamole and dove head first into some mega spicy aguachile – a dish that I discovered on my recent trip to Mexico. It’s basically a super spicy, cilantro loaded shrimp ceviche. When I tried it for the first time I almost did a backflip! It was so good I’m seriously considering sharing my recipe for it with you here soon.

But I’m totally getting ahead of myself. Back to these spicy thai marinated skirt steak tacos with avocado!
