I LOVE a good sandwich. Like LOVE LOVE.
If you’re on team sandwich too (which, let’s be honest, who isn’t), then you know what I mean when I say that there’s just something about it that *hits the spot* every single time. Pair a good sandwich with a crunchy dill pickle for extra bonus points and we’re really in business.
But, for obvious reasons, sandwiches are out on a Whole30. Howeverrr, sweet potato toast sandwiches are IN.
And you are 1000% going to want to whip up some of these!
Made with filling sweet potato toast “buns” instead of bread, and loaded up with your favorite sandwich fixings.
I went the classic turkey, lettuce tomato, avocado, red onion route because I’m a purist like that, but you could literally fill these with anything your heart desires.
Sweet potato sandwich with no bread might just end up being your new favorite lunch 😉

Ingredients
Okay so the only *required* ingredients for these little sweet potato sandwiches are sweet potatoes, and your sandwich fixings!
Sweet potato toast is literally just made with sweet potatoes, and a little olive oil for roasting if you like.

Here’s exactly what you need to make these:
- Sweet potatoes – Either cut into long planks, or small rounds. The choice is up to you. I made it both ways (see the images below), and while both were delicious, the little slider style sandwiches made out of sweet potato rounds were much easier to pick up and eat like an actual sandwich.
- Olive oil – For baking the sweet potato toast. It’s actually optional, you could leave it off all together if you prefer.
- Sandwich fixings – Whatever your heart desires! I filled my sweet potato toast sandwiches with turkey, lettuce, tomato, red onion, avocado, and avocado oil mayonnaise.
How to make sweet potato toast for sweet potato sandwiches
Sweet potato toast is super easy to make. All you need is a cutting board, and a sharp knife. The hardest part is actually cutting the sweet potato planks.
You can cut sweet potato toast 2 different ways:
- Into long planks – end to end of the sweet potato
- Into rounds – across the width of the sweet potato
Which way you cut and roast them is up to your personal preference!
Here’s the step-by-step instructions
Step 1: Preheat the oven
Preheat oven to 425 degrees and line a baking sheet with parchment paper for easy clean up.
Step 2: Cut sweet potatoes
Cut sweet potatoes into desired slices – either lengthwise for a larger “sandwich” or into rounds for a slider style “sandwich” Lightly oil both sides of sweet potato or leave them plain and place on lined baking sheet for easy clean up.
Step 3: Bake sweet potato toast
Move to the oven and bake for 20-30 minutes – until tender and lightly toasted. The thicker the pieces, the longer they will take to bake.
Remove from the oven and allow to cool completely. Either store sweet potato toast until ready to use, or build your sandwich!
Step 4: Build your sandwich
Grab to equal sized sweet potato toast pieces and layer on your toppings. Keeping in mind the more sandwich fixings you use the harder it may be to pick it up and eat it with your hands. I chose the classic combo of Whole30 compliant turkey, lettuce, tomato, avocado, red onion, and Whole30 compliant mayo. SO YUM!
If you opt for the long, lengthwise style sweet potato toast planks, your sandwich will look like this. It will also be a little harder to eat by hand, but a fork and knife will fix that easy peasy. Or you could just cut it in half!
If you opt for the smaller, crosswise sweet potato toast bun, your sandwich will be fairly easy to eat with your hands and will look something like this – think slider style sammies!
