I just can’t resist picking up random peak summer produce when I’m shopping during July and August. And shrimp is one of my favorite proteins to cook when it’s hot outside because of how quickly it cooks and how easy it is to pair with said summer produce!
Which is why I started working on the idea for this skillet recipe. Marrying two of my favorite things in the best way possible. The same way I did in this Burst Cherry Tomato and Shrimp Pasta, and this Super-Quick Garlic basil Sautéed Shrimp!
The first time I made this shrimp skillet I didn’t use the sweet corn. But when I was initially shopping for the recipe the corn on the cob was calling to me. And when I returned to the store to stock up on ingredients to test the recipe a second time? Well I gave into the call.
It just felt right to include the sweet burst of flavor that summer corn so generously provides into the mix of ingredients.
And ohh my goodness did it work. I knew I had landed on the final recipe line-up.
A few quick recipe notes
If you’re making this recipe and corn on the cob isn’t in season but you’re still looking for a taste of summer, frozen corn can easily be used instead. OR if you have leftover grilled corn from dinner the night before? Well that would also be SO yummy here.
For serving, we’ve been happily eating it over gluten free orzo tossed with a little olive oil, salt, and black pepper, but another pasta, rice, creamy polenta, or mashed potatoes would all be such excellent options. Just something to soak up all that mouth-watering creamy sauce that is lick-your-bowl good!
I tested this recipe three times, to get the texture of the sauce *just* right. The first time I used less cashews for the cashew cream – 1/3 of a cup. But it ended up feeling a little bit too thin – I really wanted the sauce to be thick enough to coat each bite perfectly. Changing the amount to 1/2 cup did just that – you can see in the images how the creamy texture of the sauce is 100% one of the highlights of this dish!


Why I’m obsessed with cashew cream as the sauce base
I cook with cashew cream in many of the recipes here on NK as a dairy-free alternative to milk or cream in soups, sauces, and pastas. And it’s honestly a much easier cooking method than you may think.
You’ll soak the cashews in just-boiled water during the initial recipe preparation (cooking the shrimp, then sautéing the shallots, garlic, and cherry tomatoes) and they will be ready to blend into the broth by the time those steps are completed.
Then, all you have to do is drain them and add to your blender container with your broth of choice and blend to combine. Only an additional 5 minutes of extra work compared to just adding broth or opening a can of coconut milk. Which I really don’t love using for dairy-free recipes unless it’s a curry or Asian-inspired dish because of the coconut flavor and its inability to build a robust, thick texture in sauces.

Creamy Tomato Basil Shrimp Skillet with Sweet Corn (Dairy Free)

Ingredients
- 1/2 cup raw cashews (80 g)
- 3 tablespoons olive oil, divided
- 1 pound large, peeled and deveined shrimp
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 medium sized shallots, finely diced
- 4 cloves garlic, chopped
- 4 cups (2 pints worth) cherry tomatoes, halved
- Generous pinch of chili flakes (optional)
- Sweet corn cut away from 2 medium sized cobs of corn, or about 1 1/2 cups frozen corn
- 1 1/2 cups chicken or vegetable broth
- 1 tablespoon nutritional yeast
- 1/2 cup loosely packed fresh basil, cut into ribbons – plus more to garnish
- Salt and pepper to taste
Instructions
- Soak the cashews. In a small heat proof bowl, soak the cashews in just boiled water for 15-30 minutes until they are pale and plump in appearance. You can continue with the next few steps of the recipe while they soak.
- Cook the shrimp. Pat shrimp very dry using paper towels. Heat 2 tablespoons olive oil over medium heat in a large skillet until shimmering. Add the shrimp in a single layer and sprinkle with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper. Cook for about 2 minutes on each side until no longer translucent. Remove to a plate, leaving any excess oil behind in the pan, and set aside.
- Cook the aromatics and tomatoes. Add the remaining 1 tablespoon of olive oil to the skillet with the shallots and garlic. Sauté for 2-3 minutes, until the shallots are transparent and lightly caramelized. Add the tomatoes and chili flakes (if using), and continue to cook, stirring occasionally and scraping up any brown bits from the bottom of the pan as the tomatoes release their liquid, for 7-8 minutes – until the tomatoes start to break down. In the final minute or so of sautéing, add the sweet corn. Reduce the heat to low.
- Make the cashew cream sauce. While the tomatoes cook, drain the cashews and add to a high-speed blender container with 1 1/2 cups chicken broth and 1 tablespoon nutritional yeast. Blend on high for 1-2 minutes until entirely smooth and creamy and no pieces of cashew remain.
- Finish assembling the dish. Add the cashew cream to the skillet and stir into the tomato and corn mixture. Simmer for 1-2 minutes until the sauce has thickened slightly. Season the sauce to taste with salt and pepper. The sauce can always be thinned with a little additional broth at this point if needed. Return the shrimp to the skillet along with the basil and stir to combine. Leave on the heat for about 2 minutes, or until the shrimp is warmed through and the basil is wilted.
- Serve & enjoy! Serve shrimp warm over pasta, rice, mashed potatoes, or polenta, garnished with additional fresh basil and black pepper if desired.
Notes
This dish should keep well in the refrigerator for 2-3 days. If the cashew cream starts separating simply stir it together to combine again.
It can be re-heated over low heat on the stove top, or in the microwave for 1-2 minutes until warm.
