Sometimes when it comes to dessert, simple is just better.
Especially this time of year when there’s a million thing pulling you in every direction, and you’re also trying to savor the season with friends and family.
Which is why I’m SO excited to introduce you to the SIMPLE joy that is these chocolate peppermint covered graham crackers.
They are just homemade *enough* that you can say you made them yourself, but rely on some store bought staples to keep things nice and easy.

Ingredients and substitutions
This easy recipe is made with a few store bought ingredients. There are also a few substitutions you could make that I’ll share below.
Here’s what you need
- Graham crackers – To keep this recipe gluten free you’ll need to find gluten free graham crackers. There’s a few brands out there but our favorite are these gluten free graham crackers from Pamela’s. They do have butter in the ingredients, so are not vegan. If you’re looking for a gluten free and dairy free graham cracker this is a good option. For something a little different you could also use your favorite store bought cookies instead of graham crackers.
- Chocolate chips – Dark chocolate chips are our favorite for this recipe, but feel free to use whatever you have on hand! Milk chocolate, semi-sweet, white chocolate, and dark chocolate are all good options.
- Coconut oil – A little bit of coconut oil helps thin the melted chocolate to make it easy to dip and drizzle.
- Peppermint extract – Just a bit of peppermint extract in the chocolate adds a nice peppermint-y touch to the graham crackers. Vanilla extract would be a great substitute if you don’t like peppermint flavored treats.
- Crushed candy canes – For a festive and pretty touch, crushed candy canes are sprinkled onto the chocolate before hardens. You could also use crushed nuts, another type of candy, sprinkles, or coconut flakes in place of the candy canes.
How to crush candy canes
The easiest (and least messy!) way to crush candy canes for a dessert like this is to unwrap them and place them in a large ziploc bag. Using a rolling pin or the bottom of a sturdy glass crush them until they have a coarse, crumbled texture.
How to melt the chocolate
There’s two simple ways to melt chocolate for making candy at home: either in the microwave or on the stove top using a double boiler.
To melt the chocolate in the microwave: Add your chocolate chips, coconut oil, and peppermint extract to a heat proof glass bowl and warm in 30 second increments, stopping to stir in between. Warm just until all the chocolate is melted and it is easily drizzled, being careful not to over heat it and burn the chocolate.
To melt the chocolate in a double boiler: Place the double boiler over medium heat with the chocolate chips, coconut oil, and peppermint extract. Stir continuously until is it smooth and completely melted.
How to make
Here’s the step-by-step
- Prep the graham cracker squares and crushed candy canes. Set aside.
- Melt dark chocolate with coconut oil and peppermint extract on the stove top in a double boiler, or in the microwave in 30 second increments, stirring in between, until smooth.
- Dip each graham cracker. Line a large cutting board with parchment paper or wax paper to keep them from sticking while the chocolate hardens. Dip each graham cracker about halfway in melted chocolate and place on lined cutting board. Drizzle with a little extra chocolate if desired. Sprinkle with crushed candy canes before the chocolate hardens. Continue with remaining graham crackers until done. Transfer to the refrigerator to chill until the chocolate is set.
- Serve immediately or store until ready to serve. Can be stored in an airtight container for up to 4 days at room temperature.

- 8 graham cracker squares, left whole, or broken in half for 16 small rectangles – I used Pamela’s Gluten Free
- 3/4 cup dark chocolate chips
- 2 teaspoons coconut oil, plus more as needed
- 1/2 teaspoon peppermint extract
- Crushed candy cane
Instructions
- Prep the graham cracker squares and crushed candy canes. Set aside.
- Melt dark chocolate with coconut oil and peppermint extract on the stove top in a double boiler, or in the microwave in 30 second increments, stirring in between until smooth. If the melted chocolate still seems too thick to easily dip and drizzle you can add a bit more coconut oil at a time until desired consistency is reached.
- Dip each graham cracker. Line a large cutting board with parchment paper or wax paper. Dip each graham cracker about halfway in melted chocolate and place on lined cutting board. Drizzle with a little extra chocolate if desired. If the chocolate starts getting too thick as you work just pop it back on the double boiler or in the microwave for another 30 seconds to re-warm. Sprinkle with crushed candy canes before the chocolate hardens. Continue with remaining graham crackers until done. Transfer to the refrigerator to chill until the chocolate is set.
- Serve immediately or store until ready to serve. Can be stored in an airtight container for up to 4 days at room temperature.
