This pasta with romesco is one of our favorite elevated yet effortless meals for those nights when we want to get dinner on the table quickly without sacrificing flavor.
We’ve been obsessing over our 10-minute recipe for Romesco Sauce (for what feels like FOREVER), and versatile as it is, adding it to pasta to make a complete meal was a total no-brainer.
And while we’ve eaten romesco sauce in SO many different ways, pairing it with pasta might just be my favorite combo yet 😍
You can modify the recipe if you want by adding a few additional ingredients like some veggies or cooked chicken sausage, but we think it’s so delightful just the way it is.

🌿 This easy pasta recipe comes together quickly with some really simple (tasty!) ingredients. Assembling the romesco sauce makes up the bulk of the prep, and can easily be done while the pasta cooks on the stovetop.
Romesco sauce
Made with roasted red peppers, almonds, parsley, garlic, sherry vinegar, olive oil, and smoked paprika, this dairy free wonder packs some seriously zippy and savory flavor.
Gluten free pasta
We almost always make this recipe with Jovial GF fusilli for lots of perfectly sauce-coated nooks and crannies of the noodles. You can use whatever your favorite pasta shape is instead!
Gluten free pasta typically comes in 12 ounce packages, but the romesco sauce included in the recipe makes more than enough to coat a pound (or more!) of pasta.
A fun little garnish for texture
Garnishes on dishes aren’t always necessary, but they often have the power to genuinely elevate simple meals like this one!
We love sprinkling this pasta with some extra chopped almonds and a scattering of fresh parsley to take it to the next level of YUM. They bring both visual and textural interest to the finished dish!
For this recipe, I think skipping them would be quite the missed opportunity, since you’ll already have those 2 ingredients on hand from making the romesco sauce anyways 😉

🌿 This pasta comes together with 2 simple components – the romesco sauce and cooked pasta. The sauce comes together in about 10 minutes, so you should be able to easily make the full recipe in less than 30 minutes!
Serving suggestions
🌟 This pasta is a delicious meal all on it’s own, but if you want to add something extra you can bolster the dish by including some chicken sausage, cooked chicken, or sautéed peppers, onions, or broccoli!
It would also pair beautifully with a simple green salad like our Arugula and Radish Salad, or a classic Caesar salad!

Ingredients
- 1 cup roasted red peppers (220 grams, or 2–3 roasted red bell peppers, depending on their size)
- 3/4 cup roasted almonds
- 1/4 cup packed fresh parsley
- 2 tablespoons tomato paste
- 2 tablespoons red wine or sherry vinegar
- 2 garlic cloves, cut into quarters or smashed
- 1 teaspoon smoked paprika
- Generous pinch of cayenne (optional)
- 1/2 – 1 teaspoon kosher salt, or to taste (if using salted almonds, you’ll need less)
- 1/4 teaspoon black pepper
- 1/3 cup olive oil
For the pasta
- 12 ounces gluten free pasta
- About 1 cup of romesco sauce, plus more as needed
- Salt and pepper to taste
- Parsley, chopped almonds, and black pepper to garnish
Instructions
- Cook pasta according to package instructions, reserve about 3/4 cup of pasta water and drain.
- While the pasta is cooking, make the romesco sauce. Add all ingredients to a food processor or blender container and process until mostly smooth, stopping to scrape down the sides as needed. Taste and add more salt if desired.
- Assemble the pasta. Add the pasta back to the pot it was cooked in over low heat along with 1 cup of the romesco sauce. Gently toss together and add the reserved pasta water a little at a time to loosen the sauce, until it evenly coats the noodles. Add a bit more romesco sauce if needed. (If you have extra sauce store it in the refrigerator to use as a dip or for other meals throughout the week!)
- Season and serve! Season to taste with salt and pepper. Divide between bowls and serve hot, garnished with chopped almonds and parsley, and enjoy!
