If there’s a kitchen hero of 2020, it’s a 30 minute pasta.
Particularly if it’s PACKED with flavor and beyond easy to make.
Like most folks these days, we’ve been leaning HARD into easy pasta lunches and dinners. And flavorful refrigerator sauces. When the two are combined? Well then you’re really in business!
Fast and easy romesco sauce has been a LONG time favorite of on NK – it’s simple to make absolutely delicious with everything from roasted chicken to grilled veggies, and (I don’t know why the heck it took me so long) but now – PASTA, TOO! 💃🏼
And it might just be my favorite combo yet 😍
Have you ever had romesco sauce before? It’s a bold and zippy spanish style sauce made with roasted red peppers, tomato paste, parsley, almonds, garlic, and is literally the magic sauce that goes with pretty much anything you could imagine pairing it with.
You could basically think of using it the same way that you would use any type of pesto.
This sauce is all about flavor and will spice up your meals LEFT AND RIGHT.

Romesco sauce ingredients
- Roasted red peppers
- Roasted almonds
- Fresh parsley
- Tomato paste
- Red wine or sherry vinegar
- Garlic
- Paprika
- Cayenne (you can leave this out if you don’t want it to be spicy)
- Olive oil
- Salt + pepper
How to make 30 minute romesco pasta
You can use a food processor or blender to make the romesco sauce.
If you use your food processor – the romesco sauce will be a little more textured and rustic.
If you use your blender – the romesco sauce will be more smooth and creamy, depending on how long you blend it for.
Both work great, and it’s totally up to you which one you decide to use!
Whichever you choose, all the ingredients for the sauce are added to the food processor or blender and processed until mostly smooth.
Give it a taste, and season with more salt if desired. Now all that’s left to do is boil your pasta, toss it with the sauce, and SERVE!
What to serve with romesco pasta
This easy romesco pasta is a delicious meal all on it’s own, but if you want to add something to it here’s some ideas to get you started:
- Serve the pasta topped with some fresh herbs, parmesan or vegan parmesan, and chili flakes.
- Toss in some of your favorite protein like chicken sausage, shredded chicken, or even a plant based protein like tofu or tempeh.
- Add a drained and rinsed can of your favorite beans for a little extra substance.
- Mix in some peas, hearty greens, or broccoli.
A few notes on the recipe
- Romesco sauce can be made in either your food processor or blender. If you use your blender the texture will be more smooth and creamy than if you make it in the food processor.
- The sauce recipe calls for jarred roasted red peppers, but you can also roast your own to use!
- As written, the romesco sauce will be quite thick. If you want to thin it at all when adding to your pasta, reserve a little of the pasta cooking water and add a little at a time until your desired consistency is reached.
- Romesco sauce will keep for at least a week in a covered container in your refrigerator, and 1 batch of the sauce should be good for 2 boxes of gluten free pasta!
- If you want to save some sauce for later, it freezes well. Use an ice cube tray to freeze small servings that you can take out of the freezer to enjoy one at a time!
- This pasta dish can be served warm or chilled as a pasta salad. To use it for a classic style pasta salad think about adding some olives, chunks of your favorite cheese, fresh herbs, and chopped red onion!

Ingredients
For Romesco Sauce:
- 1 cup roasted red peppers
- 1 cup roasted almonds
- 1/4 cup fresh parsley
- 2 tablespoons tomato paste
- 2 1/2 tablespoons red wine vinegar
- 1 clove garlic
- 1 teaspoon paprika
- 1/4 teaspoon cayenne (optional)
- 3/4 teaspoon salt – less if the almonds you’re using are salted
- 1/4 teaspoon black pepper
- 1/2 cup olive oil
For pasta:
- 12 ounces gluten free pasta
- water to boil
- about 3/4 cup romesco sauce
- parmesan cheese or vegan parmesan (optional)
- fresh parsley
Instructions
- Start a large pot of salted water to boil for the pasta.
- Make romesco sauce. Combine all sauce ingredients in a food processor or blender & process until mostly smooth, stopping to scrape down the sides as needed.
- Taste & add more salt if desired.
- Cook pasta according to package instructions. Reserve about 1/2 cup pasta water before draining to thin the sauce if needed.
- Drain pasta and toss with 3/4 cups worth of romesco sauce, thinning with a little pasta water as needed until sauce coats pasta evenly.
- Season to taste with s&p, and serve topped with parm + fresh herbs!
Notes
This pasta dish can be served warm or chilled as a pasta salad. To use it for a classic style pasta salad think about adding some olives, chunks of your favorite cheese, fresh herbs, and chopped red onion!
