I’m gonna go ahead and say it – any morning with these breakfast sausage patties is a very good morning.
Even if you’re not doing a Whole30 – they are our go to recipe all year round because they are THAT delicious!
One of my favorite go to Whole30 breakfasts is some homemade breakfast sausage (or bacon), an egg or two, and a large helping of lemony sautéed kale.
Maybe a scoop of a random sauce that’s hanging out in the refrigerator & a big forkful of sauerkraut and I’m basically in breakfast heaven.
If you make these pork breakfast sausages ahead of time and have them ready to re-heat in the morning, putting breakfast together takes 15 minutes tops.
It’s makes for a (very) delicious breakfast win!

Ingredients
The ingredients for these homemade breakfast sausage patties basically consist of two parts – ground pork + spices / aromatics.

Here’s exactly what you need to make these sausages:
- Ground pork – Ground pork is typically my go to meat for breakfast sausages, but you could also make them with ground turkey, ground chicken, or even ground beef.
- Poultry seasoning – Poultry seasoning or an all purpose seasoning would both work to give these sausages good flavor!
- Sage – Dried or finely chopped fresh sage will both work. If you use dried sage you’ll just reduce the amount – exact measurements for both options are given in the recipe card below.
- Garlic powder + onion powder – Two of my favorite dried spices for boosting the flavor of just about any savory dish! Garlic and onion powder definitely add great depth of flavor in these sausage patties.
- Green onions – Green onions are optional, but if you have them on hand I love the fresh lil burst of green flavor that they bring to this recipe.
- Chili flakes – Again, this ingredient is optional if you don’t like spicy, but so good if you want a little kick of heat!
- Salt + pepper
- Oil for cooking – Avocado oil, coconut oil, ghee, or any high heat cooking oil.
How to make
These pork breakfast sausages are made in just a couple easy steps.
This recipe makes a fairly large batch – about 16 small sausages. If you want to make less it can easily be cut in half.
However, I think more is better for this recipe as they can be easily meal prepped and stashed in the refrigerator or freezer until your ready to re-heat and enjoy!
Here’s the step-by-step instructions
Step 1: Mix together the sausage ingredients
Add all ingredients to a large bowl and mix thoroughly to combine. Form into about 16 small patties.
Step 2: Cook the sausage patties
Heat 2 tablespoons avocado oil, ghee, coconut oil, or lard in a cast iron or stainless steel skillet over medium high. Fry patties in batches, adding more oil if needed, for about 2 minutes per side depending on thickness. Cook until nicely browned and cooked through.
Step 3: Serve or store until ready to eat!
Eat immediately, or move to the refrigerator until ready to re-heat and serve. These paleo sausage patties also freeze well and can be warmed in a skillet or microwave directly from the freezer.
What gives breakfast sausage it’s flavor?
You might be wondering, what give makes breakfast sausage taste like.. well breakfast sausage, and not just ground pork?
Well, it’s generally a blend of a few typical spices – rosemary, sage, onion powder, garlic powder, and sometimes fennel seeds.
But honestly you can add whatever flavors you like best and call it a day!
I think that poultry seasoning or all purpose seasoning lay a solid foundation for these sausage patties, and then adding sage, onion powder, garlic powder, and green onions take it to the next level.

How to know when breakfast sausage is done
These breakfast sausages take about 2 minutes per side to cook, depending on the thickness.
You will know when they’re done when the center feels somewhat firm to the touch, and there is no pink remaining in the inside.
If you want to make sure they’re cooked using a meat thermometer, the internal temperature should be between 155-160 degree Fahrenheit.
What is a splatter screen and why is it helpful for this recipe
A splatter screen is a round fine mesh screen with a handle that you can place over the top of a frying pan to prevent excessive oil from splattering on the stove, or burning you.
If you’ve ever cooked burgers, sausage patties, steak, or deep fried anything on the stove top you know what a mess it can make.
While it’s not essential to use a splatter screen for this recipe, it is very helpful and one of our favorite kitchen accessories!
How to store, re-heat, and freeze
To store: These sausages can be stored already cooked, in the refrigerator for up to a week.
Alternatively, you can store the sausage mixture raw in the refrigerator for 2-3 days until your ready to cook them.
To re-heat: To re-heat these breakfast sausages simply warm them in a pan over medium heat until heated through, warm in the oven at 300 degrees F, or microwave for 30 seconds – 1 minute.
Freezing: These sausages freeze super well for easy breakfasts! To freeze, lay them individually on a plate or a small cutting board lined with parchment paper and pop them in the freezer for 30 minutes to an hour. Once the edges are frozen, transfer to a freezer safe container and re-heat the microwave for 2-3 minutes until hot.
