I found these rainbow sprinkles at Whole Foods about a month ago and fell in love with the bright and cheerful pastel tones. Without any immediate plans for them I grabbed a few bottles in my shopping cart to stash in my pantry.
Fast forward a few weeks to when I decided to whip up a batch of Dishing Out Health’s strawberries and cream energy bites. I didn’t have any shredded coconut to roll them in & instantly knew that the sprinkles were destined for that energy bite party. It ended up being just the thing I needed to brighten my day when I reached into the fridge every day to grab one for a quick snack.
I loved them so much that I decided to make my own little no bake birthday cake energy bite recipe to share with you all. I hope they brighten up your snack time, too!

These no bake birthday cake energy bites are made with just 9 pantry friendly ingredients that you likely already have on hand. Yay for pantry friendly treats!
These energy bites are made with:
- Raw cashews
- Pitted dates
- Almond butter or cashew butter
- Almond flour
- Maple syrup
- Vanilla extract
- Sea salt
- RAINBOW SPRINKLES!
How to make no bake birthday cake energy bites
These no bake birthday cake energy bites are as easy to make as adding a few basic pantry ingredients to your food processor and blitzing into a DELICIOUS vanilla + sprinkle studded dough.
Here’s the details:
Start by adding the raw cashews, pitted dates, almond or cashew butter, almond flour, maple syrup, vanilla extract, and sea salt to the bowl of a food processor.
Process everything together until it starts to come together into a dough-like consistency. Stop to scrape down the sides as needed.
If there still seems to be quite a few larger pieces of nuts and dates after processing, add a bit of just boiled water at a time and process again until the dough comes together. Don’t go overboard on the hot water or the dough will get too soft. A little bit goes a long way!
Once the dough is ready, add some sprinkles! Once the dough has come together, add in a few tablespoons of sprinkles. Pulse quickly a few times just to combine.
Now you’re ready to make the energy bites! Use a cookie scoop or a teaspoon to portion, and roll the dough into 1 inch size energy bites. Transfer to a plate as you make your way through all of the dough.
Roll the energy bites in sprinkles 🎉 Pour remaining sprinkles onto a plate and roll each ball in sprinkles until coated. This step is optional, but if you have enough sprinkles to go around these energy bites are extra cute when rolled in rainbow sprinkles!
Store in the refrigerator to chill. Transfer the energy bites to a storage container and move to the refrigerator to chill. They will keep in the refrigerator for up to 10 days, but can also be stored in the freezer for up to a month!
A few notes on this recipe:
- I have tested the recipe with both almond butter and cashew butter, and either one works!
- This recipe makes about 18 1-inch sized energy bites, simply cut it in half to make a smaller batch!
- Store these energy bites in the refrigerator for up to 10 days, or in the freezer for up to a month. For a firmer texture, enjoy them directly from the freezer!
- Rolling the energy bites in extra sprinkles is optional, but gives them a super fun look! If you don’t have enough sprinkles you could also roll them in chopped nuts or coconut.

This recipe was inspired by Dishing Out Health’s Strawberries and Cream Energy Ball Recipe
Ingredients
- 1 1/2 cups raw cashews
- 4 large pitted dates
- 1/2 cup cashew or almond butter
- 1/4 cup packed almond flour
- 1/4 cup maple syrup
- 2 teaspoons vanilla extract
- 1/4 teaspoon sea salt
- 1–2 tablespoons just boiled water – as needed
- 2 tablespoons organic sprinkles + extra for rolling the energy bites
Instructions
- Add all ingredients to the bowl of a food processor except for hot water and organic sprinkles.
- Process until a thick dough forms, stopping to scrape down the sides if needed. If it’s too thick to process and there’s still quite a few larger pieces of cashews or dates add just boiled water 1 tablespoon at a time until a dough forms.
- Once dough is fully formed, pulse in about 2 tablespoons of organic sprinkles.
- Roll into 1 inch sized energy bites. Pour remaining sprinkles onto a plate and roll each energy bite in sprinkles to coat. Move to the refrigerator to chill.
