Okay so first let’s just get this out of the way: I know what you’re thinking. Hummus for breakfast?!
It sounds a little bit strange, but I promise you – IT’S DELICIOUS! Especially when it’s spread over a charred tortilla, and paired with a simple summery tomato salad + a crispy edged fried egg. DROOL.
I first made this recipe one lazy morning a few weeks ago when these ingredients were pretty much the only fresh thing living in my refrigerator.
I thought it was going to be one of those one-off thrown together meals but something about the mediterranean-ish combo just STUCK. I’ve been loving on it ever since!
Sometimes I’ll make it with a homemade hummus like this roasted cauliflower hummus, and sometimes with a favorite store bought hummus.
Either way it makes for a filling, flavorful breakfast taco that is ready in NO TIME FLAT.
Because 15 minute breakfasts really are the best kind of breakfasts.
Plus I just LOVE the idea of recipes WITH hummus, instead of just using it as a dip.
All too often I buy a little tub of delicious hummus and only crack it open for one snack before it get’s pushed to the back of the fridge to die a slow neglected death.
These hummus breakfast tacos are here to say no more neglected hummus, ever!
Now that I’ve dipped my toes in hummus-recipe-territory I’ve come across so many other yummy ideas that I can’t wait to try.
How to make easy vegetarian hummus and tomato breakfast tacos
So we’ve already covered the basic facts that these hummus breakfast tacos are both:

But now you’re probably wondering HOW do you make them and what ingredients do you need to get down with some of your very own hummus and tomato breakfast tacos?
Well it really is quite a basic recipe.
Let’s break it down starting with the ingredients.
Ingredients needed
- Your favorite tortillas – I almost always have a pack of Siete Foods grain free tortillas in my refrigerator, so that’s what I used for this recipe. You could easily use whatever you have available to you.
- Hummus – homemade or store bought both work. I used this roasted cauliflower hummus for a bean free option, but have also made it with a classic hummus and even a spicy hummus. All were delicious!
- Eggs – fried eggs are almost always my default, but scrambled would be good too.
- Cherry tomatoes
- Red onion
- Fresh parsley
- Lemon juice
- Olive oil
- Salt and pepper
After you’ve gathered your ingredients, here’s the step by step instructions for making the recipe.
Assembling the hummus breakfast tacos
- Prepare tomato salad: gently mix the tomatoes, red onion, parsley, lemon juice, olive oil, and salt and pepper together in a small bowl. Taste and add a little more salt if desired. Set aside.
- Warm the tortillas: Heat a skillet over medium high heat until very hot. Warm tortillas for a few seconds on each side, until slightly charred and pliable. Transfer to a plate and cover with a towel to keep them warm and soft.
- Cook the eggs: Reduce heat to medium and add cooking oil. Crack eggs into skillet and fry to your desired level of doneness. Season with salt and pepper. If your skillet is small, you may want to cook them one at a time.
- Assemble the tacos: To serve spread each tortilla with about 2 tablespoons of hummus, top each with a fried egg, and a big scoop of the tomato salad.
- Serve and enjoy!
A few notes on this recipe
- Because the recipe for these vegetarian hummus tacos is so simple, try and look for the BEST tasting ingredients you can find! Tomatoes are in peak season right now so they make a great choice during the summer, but in the fall or another season consider swapping in a different vegetable that’s in season for the best possible flavor.
- I love my eggs fried, but you could prepare them any way that you like! Scrambled would also be great.
- You could also try substituting another favorite sauce for hummus. Romesco sauce, pesto, or whipped feta are just a few that come to mind!

- 2 tablespoons chopped parsley
- 2 tablespoons red onion, diced small
- 2 teaspoons lemon juice
- 1 tablespoon olive oil
- 1/4 teaspoon sea salt
- fresh cracked black pepper
For the tacos
- 2 tortillas
- 2 eggs
- 2 tablespoons avocado oil for cooking the eggs
- salt and pepper to taste
- 2 tablespoons hummus per taco – store bought or homemade both work. For a bean free option try this recipe for roasted cauliflower hummus
Instructions
- Prepare tomato salad by gently mixing all ingredients together in a small bowl. Taste and add a little more salt if desired. Set aside.
- Prepare the rest of the tacos.
- Heat a skillet over medium high heat until very hot. Warm tortillas for a few seconds on each side, until slightly charred and pliable. Transfer to a plate and cover with a towel to keep warm and soft.
- Reduce heat to medium and add avocado oil. Crack eggs into skillet and fry to your desired level of doneness. Season with salt and pepper. Note: If your skillet is small, you may want to cook them one at a time. If this is the case divide the avocado oil in half, and only add more for the second egg if needed.
- To serve spread each tortilla with 2 tablespoons of hummus, top with a fried egg, and a big scoop of the tomato salad.
- Serve immediately and enjoy!
