What ingredients do you need for this breakfast pizza with pesto and bacon?
This breakfast pizza is made with only 5 essential ingredients, and a few extras like fresh herbs and green onions if you want to take it to the next level!
The ingredients are:
- Your favorite pre-made gluten free pizza crust – I used Manini’s par-baked 10″ crust gf crust, but you could use whatever you have on hand, or your own homemade pizza dough if you have a recipe you love!
- Pesto – Homemade or store bought both work. Store bought makes this recipe even more hands off, but if you have some homemade pesto or herbs and greens that need to be used up, homemade is also delicious. I used some pesto that we had stashed in our freezer – it was essentially a riff from this 5 minute pistachio pesto recipe using more of a variety of herbs and kale, and almonds instead of pistachios. The great thing about pesto is that the ingredient combinations are almost endless. I’ve detailed my basic ratio and a few combination ideas in the “how to” section below this one!
- Eggs – I cooked them until just barely set, so the yolks are still nice and runny. But you can cook them to your preference.
- Bacon – Cooked until just barely crisp, as it will continue to cook in the oven with the pizza. You could also leave off the bacon for a vegetarian option or substitute cooked sausage.
- A mix of your favorite cheese – I chose a blend of shredded mozzarella and sharp cheddar, but so many different cheese combinations would be delicious for this pizza recipe!
- Fresh herbs and thinly sliced green onions – Just to give it an extra zing of flavor and color after the pizza comes out of the oven! If you don’t have them on hand you can always skip this step.
How to make this 5 ingredient breakfast pizza with pesto and bacon
This mouthwatering breakfast pizza is incredibly easy to make. All you need are a few pre-made ingredients, along with a few other breakfast staple ingredients to get the pizza party started!
Here’s the step-by-step instructions:
- Preheat the oven to 450 degrees, or whatever temperature is recommending for cooking your particular crust.
- Spread pizza with a thin layer of the pesto. You may need to adjust the amount of pesto to suit the size of your crust.
- Sprinkle the dough with cheese and bacon.
- Choose three spots for your eggs, and crack each one over the top. Season with a little salt and pepper.
- Bake for about 12-14 minutes. Until crust is golden brown and eggs are done to your liking. The cook time will vary some based on the crust. You can always turn on the broil setting on your oven for a minute or so before pulling the pizza out to cook the eggs a little more if desired.
- Remove from the oven. Top with parsley and green onions if using. Allow to cool a minute or two before slicing and serving!
A basic formula to make pesto from scratch
If you want to give making your own pesto sauce for this pizza a try, I’m going to share a basic formula to get you started.
Once you have the general ratios down, you can make so many different delicious variations of pesto!
Basic pesto formula:
About 1 1/2 cups tender herbs or greens + 1/3 cup nuts or seeds + 1 teaspoon lemon juice + 1 clove garlic + 1/4 teaspoon sea salt + cracked black pepper + 1/3 – 1/2 cup olive oil
For the mixed herbs or greens you might try any combination of:
- Parsley
- Basil
- Cilantro
- Dill
- Kale
- Spinach
For the nuts or seeds some of my favorite choices are:
- Pistachios
- Almonds
- Pumpkin Seeds
- Pine nuts
- Walnuts
- Sunflower seeds
How to make pesto
Add all ingredients to your food processor and process until mostly smooth. Start with about 1/3 cup of olive oil and add more as needed, until a desired consistency is reached. You want your pesto to run smoothly through the food processor but not be too oily that it no longer appears to be a cohesive sauce.
That’s it! So easy and flavorful. Also an excellent way to use up any extra greens you have in the fridge.
Pesto can always be made and frozen for a later use. I like to freeze ours in single serving sized containers for easy portioning!
What to serve with this 5 ingredient breakfast pizza
This tasty breakfast pizza would be excellent with a simple green salad, some fresh fruit, or a homemade smoothie!
Additional ingredients + substitutions
- To make this breakfast pizza vegetarian, simply leave out the bacon.
- For a dairy free option substitute with a dairy free cheese.
- The bacon could also be swapped for cooked breakfast sausage, or another type of breakfast protein
- No pesto? No worries! You could also just brush the pizza crust with a little olive oil and sprinkle it with salt, pepper, and a bit of garlic powder for a naked pizza crust.
- Want to add more veggies? Go for it! Some baby spinach, red peppers, or asparagus would all be DELICIOUS layered with the cheese and bacon.
Can you reheat breakfast pizza?
Yes absolutely! This breakfast pizza can be re-heated in the oven, in a toasted oven, or in the microwave. Just keep in mind that the eggs will continue to cook when re-heating and the yolks may not stay soft.
How to make breakfast pizza for a crowd
If you want to make this 5 ingredient breakfast pizza for a crowd, consider buying or making enough soft dough to spread out onto a large rectangular baking sheet.
Double the ingredients and cut into single serving sized squares for enough pizza for about 6 people per baking sheet sized pizza.
You could always have a second one ready to go when the first one comes out of the oven if you’re serving more than 6 people.
Can breakfast pizza be made ahead of time?
If you want to make this breakfast pizza in advance, prep it until just before the very last step – cracking the eggs over top. Otherwise everything could be done the night before. Just before baking crack the eggs over the pizza, season with salt and pepper, and bake until done!
