Hard boiled eggs are a great option because they can also be made in advance.  If serving with a breakfast salad prep the vinaigrette in advance as well for easy assembly.

Store in the refrigerator until ready to use. The olive oil with solidify in the refrigerator, so leave it out at room temperature for a little while before using, or warm it briefly in the microwave until liquid again
