Lemon Garlic Baked Salmon

Description

Say hello to the BEST healthy baked salmon recipe! Made with simple ingredients like garlic, paprika, avocado oil, lemon juice, salt, pepper, and fresh herbs. It is out of this world flavorful, perfectly cooked, and just as good for a busy weeknight dinner as it is for a dinner party. Gluten free, dairy free, Whole30, paleo, keto, and low carb.  


Ingredients

  • 4 6-ounce salmon filets
  • 2 tablespoons avocado oil
  • 2 cloves of garlic, grated or pressed
  • 2 teaspoons fresh lemon juice
  • 1/2 teaspoon paprika
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • Fresh parsley and dill for serving
  • Lemon wedges for serving

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Prep salmon. Remove any bones from the salmon fillets. In a small bowl mix together avocado oil, grated or pressed garlic, lemon juice, paprika, kosher salt, and black pepper until well combined. Drizzle salmon with avocado oil mixture and use your hands or a silicone spatula to evenly coat, making sure some of the fresh garlic is on top of each filet. Place in a baking dish or on a rimmed sheet pan skin side down, evenly spaced apart.
  3. Bake. Transfer to the oven and bake for 12-15 minutes, or until cooked to your liking. See the section in the blog post for tons of tips on how to tell when your salmon is done cooking.
  4. Garnish and serve. Top with fresh herbs and serve with lemon wedges and your favorite side dish!

Notes

Storage: This salmon will keep in the refrigerator for up to 4 days in an airtight container.

Reheating: My favorite way to reheat salmon is in the oven on medium low heat – somewhere between 325° – 350°. At that temp it should be warmed through in about 6-8 minutes. A toaster oven will work in the same way. You can also reheat in the microwave for 1-2 minutes until heated through.

Freezing: While technically you can freeze cooked salmon fillets, I’m not sure that you should. The texture will be compromised and it will likely be dry once reheated. If you are set on giving it a try read through this article for some good tips.
