Perfectly Seared Scallops With Bacon And Kale Pesto

These perfectly seared scallops with bacon and kale pesto are the perfect dinner for any night of the week!

Healthy, crave worthy, elegant, and OH-SO-DELICIOUS! Gluten free & ready in less than 30 minutes!

– Roasted almonds – Kale – Parsley – Garlic

INGREDIENTS:

First, make the pesto. Add all kale pesto ingredients to a food processor and process until mostly smooth, stopping to scrape down the sides as needed.

Thin with a little extra olive oil if desired. Taste and add more salt and lemon juice if needed. Set aside.

Preheat oven to 250 degrees, and then turn off (the oven is only warmed to keep the corn and bacon warm while the scallops cook).

Dice bacon into small pieces. Have corn ready in a measuring cup. Heat a skillet (cast iron or non stick is my preference) over medium heat.
