Perfectly Seared Scallops With Bacon And Kale Pesto

These perfectly seared scallops with bacon and kale pesto are the perfect dinner for any night of the week!  Healthy, crave worthy, elegant, and OH-SO-DELICIOUS! Gluten free & ready in less than 30 minutes!

INGREDIENTS:

Kale pesto - roasted almonds - kale, tough stems removed - parsley - garlic - salt - black pepper - lemon juice - pinch of red pepper flakes - olive oil Corn & bacon sauté - bacon - frozen or fresh corn kernels

First, make the pesto. Add all kale pesto ingredients to a food processor and process until mostly smooth, stopping to scrape down the sides as needed.

Preheat oven to 250 degrees, and then turn off (the oven is only warmed to keep the corn and bacon warm while the scallops cook).

Dice bacon into small pieces. Have corn ready in a measuring cup. Heat a skillet (cast iron or non stick is my preference) over medium heat. Add bacon, and cook, stirring frequently, until bacon is done to your liking.
