Healthy Shrimp And Avocado Salad


This healthy shrimp and avocado salad is an ideal weeknight (or any night!) dinner. Quick and easy to make, and oh-so-yummy!

All tossed in a bright, crave-able lemony dressing (without mayo!) that will delight your taste buds. Whole30, paleo, gluten free, and dairy free.

– Shrimp – Avocado – Cherry tomatoes – Cucumbers – Red onion – Arugula


Remove tails from shrimp and cut into thirds. Transfer to a large bowl or glass tupperware.

In a small bowl combine lemon juice, olive oil, garlic, salt, and pepper. Whisk to combine.

Pour about 3 tablespoons of the dressing over the cooked shrimp and toss to combine.

Transfer shrimp to the refrigerator to marinate while you prep the rest of the salad ingredients.
