Description

This spring salad with green goddess dressing is an absolute must-make once the weather starts warming up outside! It’s made with your favorite tender salad greens, sugar snap peas, thinly sliced radishes, creamy avocado, green onions, chopped pistachios, and freshly snipped chives. Topped and tossed with an ultra creamy (herby!) green goddess dressing for absolute spring salad PERFECTION!

Ingredients

Scale
  • 5 cups mixed salad greens or butter lettuce
  • 5 radishes, trimmed and thinly sliced
  • 1 cup sugar snap peas, cut on a diagonal into 1/2 inch pieces
  • 4 green onions, thinly sliced
  • 1/3 cup chopped pistachios
  • 1 small avocado, thinly sliced or cut into bite sized pieces
  • 2 tablespoons snipped chives or parsley, plus more for serving
  • Generous pinch of kosher salt and black pepper
  • Green Goddess Dressing, or another dressing of choice

Instructions

  1. Assemble salad. Layer all salad ingredients except the dressing in a large serving dish or bowl, and sprinkle salad ingredients with a generous pinch of kosher salt and black pepper.
  2. Dress. Drizzle with about 1/3 a cup of dressing (or as much as desired), and gently toss to coat.
  3. Serve. Finish with a little freshly cracked black pepper and a sprinkle of extra herbs if desired, serve immediately, and enjoy!

Notes

Planning to assemble ahead of serving? If making this salad ahead of time, I recommend leaving all of the ingredients undressed until ready to serve. The avocado should be sliced just before adding to the salad.

The Green Goddess Dressing can be made a day in advance and stored in the refrigerator until ready to use.
