The Best Healthy Gazpacho

Whole30 + GF + Vegan


This chilled soup is made with ripe tomatoes, red and green bell peppers, red onion, garlic, cucumber, sherry vinegar, olive oil, salt and pepper


Wash and chop all the vegetables. They don't have to be in super small pieces since they'll be blended together.



Add all the gazpacho ingredients to your blender in 2 separate batches. After blending the first batch, add the rest of the veggies and blend again.


Blend on high until smooth and emulsified. The soup should turn a paler shade of orange and take on a nice creamy consistency. Yum!


Make cherry tomato salad garnish just before serving if desired (highly recommended!)


Chill the gazpacho for at least an hour, or up to overnight. Serve topped with a generous scoop of the tomato salad!

This easy and healthy cold soup is absolutely delicious served with a hearty salad, grilled meat, or a tapas style spread! And PERFECT for end of season tomatoes!
