Guys, I made a tropical green coconut smoothie, and it’s so good I just can’t keep it to myself! 😍
I shared this recipe on my insta stories a few weeks ago, but it’s become such a staple around here during our mornings (and afternoons… who doesn’t love a great afternoon snack?) that I decided to snap some pics and do a little post about it!
Because sometimes, in the middle of winter, when it’s really freaking cold outside for the millionth day in a row, you just have to pretend you’re on a beach somewhere, enjoying the tastiest tropical beverage you can imagine 🍹🍍🌿🍋
Hello (delicious) coping mechanism!
I’m not gonna lie, I am not exactly a smoothie goddess. I don’t alway have the easiest time finding the right ratio for them.. Let’s just say it’s not my forte in the kitchen. Sometimes I even sense a little hesitation when I ask my hunny if he wants me to make him a smoothie in the morning.
But I’ve been practicing. And practice makes perfect, right? So this pretty green number? Well it’s been winning me all kinds of points.
So if you can trust me with your fruit and greens after that not-so promising introduction, I think you and your hunnies will love it too.
It’s full of all the good stuff that our bodies need this time of year – ginger, greens, apples, pineapple, mango, banana and coconut milk are all here to nourish you from the inside out.
The flavor is super well balanced. It tastes sweet enough that you could drink it every day without feeling like you’re going overboard on the this-is-so-healthy-it’s-boring train, but it also tastes healthy enough that you don’t feel like you’re going overboard on the this-is-supposed-to-be-healthy-but-tastes-like-candy train. I think that’s that magic ginger + lemon combo.

And if you are missing one of the ingredients or don’t care for // can’t have one of them it’s pretty easy to swap it out for something else. The only thing to be mindful of is to keep a ratio between the sweeter ingredients (banana, mango, pineapple) and the less sweet + more tart ones (apple, lemon, ginger, greens).
My vitamix is by far my most well-loved appliance in the kitchen. It’s a hefty investment but one that seriously pays off. I have been using mine multiple times a day for the last 9 years (before I even met my husband!) and it’s still going strong. Now that’s some serious staying power.
But if you don’t have a high speed blender the best thing you can do when you want to make a green smoothie (per the recommendation of the lovely ladies over at Simple Green Smoothies) is to add the liquid and greens first, and blend on high until you have a green juice situation happening. After that you can add the remaining ingredients and blend until smooth + creamy.
So here’s to pouring ourselves cups brimming full of veggie + fruit goodness in the middle of winter and being smoothie goddesses and gods.
Yep. I’m gonna go ahead and manifest that title.

Printtropical green coconut smoothie {dairy free}
- Total Time: 5 minutes
- Yield: 2 servings 1x
Description
Tropical green coconut smoothies! Here to brighten up your winter vibes with kale, ginger, lemon, mango, pineapple, banana and coconut milk. Dairy free + paleo friendly.
Ingredients
- 1 cup packed green kale
- 1 banana
- 1/2 small apple
- 1/4 cup frozen mango
- 1/4 cup frozen pineapple
- 1/2 inch piece of ginger
- 1 tbps lemon juice
- 1 1/4 cups coconut milk
- 4 ice cubes
- Pinch of sea salt
- hemp seeds for garnish (optional)
Instructions
- Place all ingredients in blender and blend on high until completely smooth, thinning with a tiny bit of water if necessary.
- Pour into 2 glasses and top with sliced banana and hemp seeds if desired.
