the summer is inevitably starting to wind down. but, as my six year old self liked to make very clear, summer is not really over until September 21st. this point was usually made following a comment about my birthday not being in the summer…these things are very important you know. now I’m going to jump back on that bandwagon so we can eat more popsicles and barbeque and play outside for a little while longer. puh-lease!? 🙏 I’m almost ready but not quite ready ready.
I like to think that these tasty oreo cheesecake popsicles are the perfect end of summer popsicle. while not of the fruity variety for those mega hot days, things are cooling down now just enough that these will fit right in as a mid day treat or a fun dessert to enjoy instead of one that requires turning on that oven for a long period of time. we can still at least pretend we don’t want to do that, right? for the sake of popsicles? ok let’s do it. 🎉
it took me a few tries to get this one right, but I finally landed on a great method. man sometimes recipe testing can be so awful – can you just imagine all of the oreo cheesecake popsicles we had to eat? 😉
they’re the perfect mix of Greek yogurt and (I know it sounds weird but trust me on this one) cream cheese to really get that perfect balance of actual cheesecake flavor without being too heavy. then there’s the usual suspects of a bit of vanilla and of course, oreo cookies. I opt for the organic newmans own brand because they are delishuss and also organic, yay! 🙌
I tried making this in a stand mixer – which did not work so well. things just didn’t get mixed up the way they should. and in a cuisinart? well it would work if you had a really big one, my 8 cup had some leaking issues (I guess those liquid fill lines are there for a reason).
the winning kitchen appliance here was the good old fashioned blender. the one thing that you have to pay attention to is how much you blend after you add your oreo cookies. a super quick pulse and you’ll have more of a full cookie piece studded popsicle. a few more pulses in the blender and they will be something closer to a cookies and cream pop. I have made them both ways and neither disappointed!

a delectable and tasty oreo cheesecake popsicle.
- 4 oz cream cheese
- 3/4 cup Greek yogurt, full fat
- 1 1/2 cup whole milk
- pinch of sea salt
- 1/2 tsp vanilla extract
- 2/3 cup powdered sugar
- 8 organic oreos roughly chopped
- combine the first six ingredients in a blender and blend until fully combined.
- add roughly chopped oreo cookies and pulse carefully until desired cookie size is reached.
- pour into popsicle molds, freeze overnight or for at least 8 hours, and enjoy!!
