ok you guys, I’m pretty sure I discovered one of the easiest and most delicious ways to make your house smell like a holiday haven.
roasted. cinnamon. apples.
eek!
I don’t think I even knew how much I would love them (I have never even been a huge apple pie fan, but I had this idea of making these smoothies and if you want to make roasted apple cinnamon smoothies you kind of need roasted cinnamon apples) until I pulled them out of the oven.. and the whole house smelled amazing and the cinnamon-ey sauce was all caramelized and bubbling away.
and I almost lost it 😱👅😱👅.
so I’m bringing them to you as their very own post first because they are THAT GOOD and second as the first part of a 3 part smoothie recipe just in case you feel like being as crazy as me, all in the name of a damn delicious smoothie.
but seriously they can be eaten in at least a million perfect ways:
spooned warm over vanilla ice cream, swirled into your morning oatmeal, or as a super easy topping for some bite sized puff pastry squares (with a dollop of whipped cream? I think so.)
I made them with butter, but I don’t think you would have a single problem in the world if you decide to use coconut oil instead for a dairy free option. and I have to say, generally I tend to avoid using nutmeg as a baking spice but it fits in PERFECTLY here. it doesn’t jump out at my nutmeg-averse palate and I think you’ll find the same if you feel me on the whole nutmeg thing.
so here you go loves! my recipe for the best ever roasted cinnamon apples, and the first step in making the yummiest smoothies! (if you have enough left over by the time I get to that post!)
*my inspiration for this recipe came from a post you can find here, from Joy the Baker.
did you make this recipe? I would love to know how it turned out! you can leave me a comment below, or snap a picture and post it to instagram with the hashtag #nyssaskitchen! xo

Not sure how to post a picture, but I made this recipe tonight and it was delish. We went apple picking yesterday and I have a giant bag! I used Granny Smith and Rome and doubled the recipe. It was a big hit and we will have the leftovers for breakfast – alone or as an oatmeal topping with some walnuts…mmmmm. Mine didn’t get carmelized, but that’s ok 🙂

excellent!! so happy to hear that you loved them. on oatmeal with walnuts sounds like a divine way to eat the leftovers! if you made a bigger batch the pan may have been a more crowded which would have kept the apples from caramelizing. if you have the patience and you want them to caramelize next time you could cook them in two batches! 🙂
best!

Do you think I could substitute the brown sugar for honey at all? My mom isn’t supposed to have any sugar besides honey in her diet but these as part of your smoothie look amazing! Thanks!!
Nyssa Tanner says
Hi Emily! yes I think that a honey substitution would be just fine! since honey is actually a bit sweeter than sugar (weird I know!) I would keep a close eye on the apples during the last bit of baking to make sure they don’t burn, but other than that I think you wouldn’t have any issues! I would love to hear how they turn out. enjoy!! 🙂
