um hello pineapple tequila dream!
I know that since this drink recipe is coming to you in the dead of winter you might expect something like mulled wine, or spiked hot chocolate (which I’ve never made but sounds amazing – does anyone have the perfect recipe? I’m all ears 👂👂!!) but not from this girl. we went for the fresh pineapple margaritas for two.
let me explain.
we’ve had this big beautiful pineapple sitting on our counter top since my grocery trip last week. a pineapple that I bought just because who can resist a big beautiful pineapple?
I had no plan for this pineapple. I definitely did have a plan for all of the other groceries in my refrigerator but it was saturday night and I was in full on procrastination //slash// I really want a margarita mode. you guys have been there, right??
and so the fresh pineapple margarita mission began.
it was a tasty mission and it turned out so well that now I’m here sharing it with you because MAYBE even though it’s totally cold and grey outside, maybe BECAUSE it’s totally cold and grey outside you want a fresh, fruity, icy margarita too. made with real lime juice and honey instead of sugar, a good swap to make when you can.
(if you need me I’m just going to be over here pretending it’s summer!!!)
I think because I was so anxious to do something delicious and boozy with this pineapple I jumped the gun a little bit and it wasn’t quite as ripe as it could have been, so I added a little bit more honey to our margaritas. if you have more patience than me and your pineapple is like so SO juicy and sweet then you won’t need quite so much. or if you like things on the less sweet side in general maybe skip it all together at first (especially if you’re using Cointreau – which is quite sweet) and see what you think.
trust your taste buds and they will not steer you wrong! especially when you’re taste testing fresh pineapple margaritas. 😉
*recipe update! I have received some feedback that without adding a bit of juice these margs are a little on the frothy side. SO! if you want more of a slushy margarita experience a little bit of pineapple juice would move things in that direction!*

a blended fresh pineapple margarita sweetened naturally with honey! refreshing and easy to make at home, this drink will have you doing the happy dance!
- 2 cups fresh pineapple pieces
- juice of one lime
- juice of half a lemon
- *a splash of pineapple juice* (see note in blog post)
- 2–4 tbs honey (depending on how sweet your pineapple is)
- pinch of salt
- 1 1/2 oz (3 tbs) contreau (or another orange flavored liquor, or a splash of oj)
- 4 oz tequila (8 tbs)
- 8 ice cubes
- put all ingredients in a blender and process on high until well blended.
- serve immediately garnished with lime wedges and enjoy!
