Description
Chocolate peppermint covered graham crackers are a delicious and easy holiday treat! Made with gluten free graham crackers (or regular if you’re not GF), melted chocolate, peppermint extract, and crushed candy canes – no baking required! A simple and festive treat that the whole family will love making and eating! Gluten free, vegan option.
Ingredients
- 8 graham cracker squares, left whole, or broken in half for 16 small rectangles – I used Pamela’s Gluten Free
- 3/4 cup dark chocolate chips
- 2 teaspoons coconut oil, plus more as needed
- 1/2 teaspoon peppermint extract
- Crushed candy cane
Instructions
- Prep the graham cracker squares and crushed candy canes. Set aside.
- Melt dark chocolate with coconut oil and peppermint extract on the stove top in a double boiler, or in the microwave in 30 second increments, stirring in between until smooth. If the melted chocolate still seems too thick to easily dip and drizzle you can add a bit more coconut oil at a time until desired consistency is reached.
- Dip each graham cracker. Line a large cutting board with parchment paper or wax paper. Dip each graham cracker about halfway in melted chocolate and place on lined cutting board. Drizzle with a little extra chocolate if desired. If the chocolate starts getting too thick as you work just pop it back on the double boiler or in the microwave for another 30 seconds to re-warm. Sprinkle with crushed candy canes before the chocolate hardens. Continue with remaining graham crackers until done. Transfer to the refrigerator to chill until the chocolate is set.
- Serve immediately or store until ready to serve. Can be stored in an airtight container for up to 4 days at room temperature.
