Alllllrighty. Happy Friday, friends! The weekend has arrived once again. Let’s get down to business and talk black bean soup! The BEST vegan black bean soup to be specific.

I get it. Black bean soup is not exactly a revolutionary recipe. Nothing crazy or super out of the box here. But this one is very good. I wouldn’t call it the best if I didn’t mean it.

Of course that is just my opinion but we’ve been doing this long enough that I think you’ve got some level of trust in me 😉

I’ve been making this soup sort of on the fly for the last handful of years and it never gets old. Always quick, easy, healthy and filling! Basically everything you could ever want from a black bean soup.

And now, I’ve got good news and I’ve got bad news.

I would ask you which one you want first, but since we can’t really do that I’m just gonna go good news first.

Good news: you can make the best vegan black bean soup for your people after reading this post!

The bad news: These pictures kind of make me cringe. But I’m hoping you guys have a more forgiving opinion of my photography than I do. Or at least don’t judge the quality of my recipes by the quality of my photographs 😝

I realized when I hopped on here to put this post together how many of them were actually out of focus 🙃

I do all of my work on a little MacBook Air – convenient for doing work anywhere, not such a powerful display. And after editing the pictures for this recipe I thought they were totally in focus and ready to go but soon found out otherwise. But what’s a girl to do? All because I snuck in one last shoot when the light wasn’t so good and sometimes that’s just what happens. Progress over Perfection – isn’t that how the saying goes?

Let’s just roll with it.

And yes I know, I know.. the screen on my 13″ is too small for the work I do. Maybe I’ll upgrade with my tax return? Seems like a good idea to me, now I just have to talk Patrick into it 😉

So I picked the best images of the bunch and we’re pressing on anyways. The ones I chose are actully pretty ok. I was just a little disappointed that some of the images I was the most excited about didn’t make the cut. Maybe I’ll re-shoot this post sometime in the future, but I feel like your end of October deserves this soup before I have a chance to do that.

But let’s talk about why we’re all reallllly here, which is this soup!

The directions are pretty straightforward – chop, sauté, simmer, blend is basically how making this soup goes. With of lots of flavorful vegetables and spices to give it some seriously satisfying flavor.

What vegetables and spices you ask?

I just realized looking back over the recipe that the ingredient list does appear a little bit long. But it’s nothing that you can’t tackle. Mostly just diced veggies and spices – easy, right? Here’s the ingredients:

  • canned black beans
  • onion
  • bell peppers
  • jalapeño pepper (if ya like it spicy 🔥)
  • celery
  • tomato paste
  • garlic
  • cumin
  • oregano
  • paprika
  • bay leaf
  • broth
  • salt and pepper

And then of course some garnishes for fun – because I truly believe that every good soup is made great with the right garnish. It adds a little pop of flavor, sometimes some texture, and just the right punch of extra extra.

Honestly it’s like frosting on a cake. You can eat the cake without frosting, but it just isn’t as good 😉

Ingredients

For soup:

  • 2 tablespoons avocado oil
  • 1 yellow onion, diced
  • 1 small red bell pepper, diced
  • 1 small green pepper, diced
  • 1 stalk of celery, cut into strips and finely diced
  • 1 jalapeno pepper, finely diced
  • 1 teaspoon sea salt
  • 1 tablespoon tomato paste
  • 2 cloves of garlic, minced
  • 2 teaspoons cumin
  • 1/4 teaspoon oregano 
  • 1/2 teaspoon paprika 
  • freshly ground black pepper
  • 1 bay leaf
  • 3 cups broth of choice + a little extra to thin if needed
  • 2 cans black beans, drained and rinsed

For garnish:

  • lime – this one is the only one I INSIST on! Brings the flavors to life. 
  • sliced jalapeno
  • fresh cilantro
  • red onion

Instructions

  1. In a large soup pot, heat avocado oil to just barely above medium heat. 
  2. Add diced onion, celery, bell peppers, jalapeño and 1 teaspoon salt. Sauté for about 10 minutes, stirring occasionally, until veggies are soft and starting to caramelize. 
  3. Add minced garlic, tomato paste and dried spices, including bay leaf. Stir constantly and cook spices for a minute or so, until fragrant and sticking to the bottom of the pan. 
  4. Add broth and beans, and scrape up any brown bits from the bottom of the pan. Bring to a boil and then reduce to a strong simmer. 
  5. Simmer for about 15 minutes, until soup has reduced slightly and flavors have had a chance to mingle. 
  6. Transfer half of the soup to a blender and blend until smooth. Return blended soup to the pot and stir together. Thin with a little bit more broth if it is too thick and season with salt. 
  7. Serve with fresh lime, diced red onion, cilantro, jalapeños and sour cream and/or cheese (for the non vegan folks!)

Notes

  • For the non-vegan folks: a little yogurt / sour cream and some grated cheese also make an amazing addition to the top of the soup!
