To be honest, I almost didn’t share this post. Not because the recipe isn’t good enough, but because.. the pictures. So silly, I know. But I’m a perfectionist (that Virgo + Scorpio astrology combo is a doozy 😁) And the light just wasn’t very good, and I didn’t get “the shot” I wanted, but after I posted a picture of this spicy watermelon salad with cilantro and lime on Instagram and you guys went crazy for it, I thought, well now I HAVE to share it with you. Because it really is delicious. And I can just gonna put that little voice in my head that keeps saying the pictures aren’t good enough to the side and get to the good stuff.
Because this recipe, you guys, is the good stuff. And I kind of feel like I have this unofficial contract with you to share the best of the best with you.

I almost started this post with “snacks are made for summer time eating”. But then I backspaced my way out of that one real quick because I honestly don’t think there’s a time of year where a good snack doesn’t have a place at the table. Amirite?

It was one of those accidental recipes (those are my favorite!) that just sort of happened one thanksgiving when I had an extra batch of cashew cream in the fridge that I didn’t use up when making this gravy, and some extra roasted beets from this recipe. In search of a yummy snack we added those two things plus a few extra goodies to the food processor and this 5 ingredient cashew beet snack dip was born.
I’ve honestly been meaning to share the recipe with you guys for like, um, forever.. but somehow it ended up at the bottom of my blog post ideas list and I just kind of forgot about it (gasp! I know.) until my best friend who helped me come up with the recipe told me she had just made it for a party. And then I snapped back to my senses and put it right back at the top of my list.

Creamy dairy free tomato and red pepper soup is naturally gluten and dairy free and bursting with summertime flavor. If there’s one soup that fits in this time of year, this tomato soup is it. Tomatoes just don’t get any sweeter than they are right now. And not only are they having an insanely delicious moment in the spotlight, they are also crazy affordable. The same goes for the red peppers. That’s the bonus of eating with the seasons ya’ll! Freaking delicious produce that doesn’t break the bank. Which means a little extra money in your wallet for that bottle of white wine or a fancy chocolate bar.
At least that’s how I justify those little splurge purchases 😉
