Shaved Carrot and Parsley Salad {paleo + vegan}

Is it just me, or does winter seem to be a hard time to remember to include fresh vegetables in the dinner line up? The allure or roasting every vegetable that crosses my path into a sweet and caramelized nirvana is almost always too much to resist. But once in awhile, a salad comes along that does that perfect little thing of brightening up a hearty rich mid-winter meal like nothing else can. And this shaved carrot and parsley salad is exactly that.

Because even though you’ve bookmarked every recipe for a slow braise you can get your hands on, and you’re making a giant pot of soup once a week, a little fresh veggie salad can still have that magic way of bringing a dinner together and making it feel like a real adult meal.

And adult meals can be hard sometimes.

Maybe I’m feeling especially compelled to share the recipe for this carrot salad with you because all I ate today was scrambled eggs, 1/2 an avocado, and 2 grain free scones (<— Not an adult meal, but it is real life.) And all I really want right now is some yummy healthy food to even out the playing field. You know, so I can eat more cookies. Recipe testing all the holiday goodies for the blog comes at a price, yo.

But in truth, this time of year more than ever, we gotta remember to take care of ourselves. November –> December burnout is a THING, and a good place to start when it comes to staying on track of self care (aka focusing on something other than all the holiday gifts you need to buy, parties you’re attending, all the outfits for said parties that need to be assembled, cookies that need to be baked for the fam, etc etc etc.. all during a season when you’re ALSO just supposed to be grateful for what you have and the people in your life but the world is sending such MIXED MESSAGES. It can be stressful, can’t it? Whew. That was a mouthful.)… is with your FOOD!

So simple, but so powerful.

It reminds us to slow down. It reminds us what is really the most important. It also reminds us that we already have a lot of the tools we need to take care of ourselves.

In last week’s installment of Rob Brezsny’s Astrology letter I was reminded (hiii fellow Virgo’s!) that the question of what I might do to take better care of myself will be a very relevant one in the coming year. That loving oneself is a great way to explore what that might look like, and that there’s still a lot to learn in this department. Which is pretty good advice even if you’re not into the whole astrology thing. Never stop holding the question: How could I do this better? And I just know that food plays an important role in that picture. It always does, right?

Plus, it’s just nice to see some color on your plate.

grilled summer squash caprese salad with burrata and basil {vegetaraian + gluten free + keto friendly}

Happy Fall, friends! The season of cozy everything has finally arrived, although I realize that in many parts of the states it hasn’t exactly felt like fall. We’re lucky enough to have had a little mix of both fall weather and sunny days here in Seattle. We’ve had some rain (thank god!) but the temperatures have still been warm enough for grilling and late afternoon lawn games, the sun blessing us with a few more lovely rays before she tucks herself away under a cover of clouds. And since grilling weather is not completely gone, we’ve been making things like this grilled summer squash caprese salad with burrata and basil.

If you’ve been following NK for awhile, you’ve probably noticed that I took a bit of a break from dairy over the last year or so, with the exception of yogurt and some hard cheeses. But lately I’ve been trying to add some back in – mostly just different types of cheese (although I did buy some heavy whipping cream around my birthday to make this brown sugar pavlova – pretty much the best birthday treat of all time!)

Which led to discovering the joy of burrata cheese. And once you find the beauty in burrata it’s sort of impossible to resist the simple pleasure of tearing open that perfect little mozzarella packet of soft cheesy goodness.

Although IF you are strictly dairy free, I think you could make a pretty dang delicious salad in similar fashion by substituting some creamy avocado for the burrata. Definitely adding that to my list for next time.

mango chorizo taco salad bowls with green sauce {gluten free}

Well HELLO, my loves! I’m still here!

I haven’t fallen off a cliff or moved to the middle of nowhere with no internet I PROMISE.

Just took a break from blog land for a little while. But I did miss you, and I have to admit I have that guilty feeling in my stomach that I get when I haven’t called my mother in waaay too long. I know we’ve all been there. Maybe we can make it right with by sitting down with this some of these mango chorizo taco salad bowls with green sauce. Anything topped with green sauce usually makes things right.

This past two weeks gave me a chance to do something that had been missing for awhile – time to re-connect with myself, Patrick, friends, aaaand my inner wild child (<< all very important things, you know?)

Galavanting around to the soundtrack of our favorite bands was so fulfilling and just the kind of magic that I needed to feel like I had really had a SUMMER. Sitting inside every day on a computer and then going inside to work at the restaurants was starting to feel too predictable and even a little stifling.

Just the very fact of not picking up my cell phone for FIVE DAYS STRAIGHT was incredibly liberating, and really put me back in touch with the person that I am without all the filters and perfectly edited captions. I felt soooo much love surround me in the last two weeks and it was pure, raw, maybe-haven’t showered-in-a-little-too-long Nyssa, and it was so affirming and self realizing.

It sounds a little cliche, but summer festival season always fills up my heart and soul in a way that nothing else can, and this year did not disappoint. But I do have to admit that this mango chorizo taco salad bowl with green sauce is a pretty great thing to come home to, and I hope you’ll think so too.
