I’m totally ready to embrace the fall vibes that are setting in these days, but first, some superfood yogurt parfaits to celebrate the last of the sunny season’s beautiful berries.
in truth, this post was supposed to go up a week ago, BEFORE summer officially came to an end, but then you know, mercury in retrograde came along and my images were all posting blurry. so fun trying to figure that one out. thank goodness for the awesome community over at Food Blogger Pro who helped me sort everything out! community makes life’s challenges so much easier to manage.
but since these are so easy to make and such a perfect, healthy breakfast or snack, AND the farmer’s markets are still selling blueberries and raspberries by the flat, I’m gonna share this super easy recipe with you anyways.
let’s just say making these superfood and berry yogurt parfaits is like giving one last big hug to the epic-ness that was this summer.

because we all know that mornings can be a little…rough. and frazzle-y. and what makes mornings even more rough + frazzle-y? not eating something at least mostly healthy before heading out the door.
(yes I am that person who neeeeds to eat breakfast. never-could-I-ever skip this perfect meal. I’m not sure what would happen if I did but I might melt into a puddle of..I don’t know what but I don’t think it would be pretty.)
so a few months ago I decided that smoothies we’re going to be my new monday through friday BFF (ok sometimes weekends too because smoothies are kind of AWESOME!).
they’re so easy to throw together quickly, and if you’re like us and sometimes use jars instead of regular glasses well you just pop a lid on that glorious glass of blended vibrance and you’re out the door with a nourishing breakfast to boot.
I thought it might be too good to be true when I discovered this recipe over at tough cookie’s blog in all of it’s glorious simplicity. but since it was exactly what I had been looking for, I couldn’t resist whipping it up for a unofficially-summer-late-night-dessert-snack. it was one of those nights when your house is suddenly full of some of your favorite people. those nights are the best.
this raspberry mousse is light, fresh & suuper easy! 3 ingredients easy. all you need is a bag of your favorite frozen fruit (we used raspberries), egg whites, a little bit of sugar, 5 minutes and your food processor. you can throw some fresh whipped cream on the top if you have it but it definitely won’t be a deal breaker if you don’t.
