There’s something about a fresh fruit crisp that is the very epitome of summer dessert charm. It’s a simple + humble treat that, when paired with a scoop of creamy (in this case, dairy free) vanilla ice cream is like the cherry on top of a perfect summer day. 

We’ve been doing a lot of that simple cooking these days as the light ebbs long into the evening hours (although we are on the other side of that trend now, it will still be awhile before we’re eating dinner in the dark).

Dinners on our deck with the cool evening breeze are embraced as often as possible, usually with a glass of rosé (for me) and a cold beer (for him) in hand. Loaded Greek Salad bowl with crispy chickpeas and creamy jalepeno dressing {gluten free + dairy free option}

Summer is coming and that means allllll the loaded salad bowls! And we’re kicking off the warm weather salad vibes with this gem right here – a loaded greek salad bowl with crispy chickpeas and creamy jalepeño dressing!

I first had the notion to put together a greek salad bowl during a lunch date with myself at Oddfellows Cafe here in Seattle. If you’re ever in Seattle do yourself a favor and brunch, lunch or have dinner there! It’s a great space with delicious food + and a wonderful drink selection.

They had a special running for a greek salad, and I sorta fell in love with it.

The weekend after that we were heading out to the coast to vacation on the beach for memorial day weekend with some friends of ours, and needed to plan all of our meals for the trip. I tried my hand at throwing together a loaded greek salad and it turned out so great. I knew with a couple more simple tweaks it was destined to be shared with you.

It comes piled high with tender spicy greens, sweet tomatoes, briny and buttery casteltravano olives (these olives bring me to my KNEES!), fresh cucumbers, cubed smoked turkey for some protein, spiced crispy chickpeas, all the fresh herbs, green onions, and a little feta cheese to set it off IF that’s your style.

And did I mention it’s topped with a creamy jalepeño dressing ?🙂

I DIE.

This situation is pretty much salad heaven, you guys.

Definitely not a classic greek salad, but we’ve all probably had our fair share of that, right?

Creamy vanilla bean and cherry raspberry smash chia seed pudding {paleo + vegan}

It is officially cherry season up here in the PNW, and I am in ripe, juicy, cherry heavennn. I apologize in advance if the next ten (maybe more?) recipes have cherries in them. I definitely foresee that as a legit possibility.

Starting out the cherry parade is this creamy vanilla bean and cherry raspberry smash chia seed pudding!

And I can’t wait for you to try them.

It feels like cherry season came a little bit early this year. They usually hit the market the beginning of June, but tend to be a bit wishful in their state of ripeness and flavor until at least the end of the month, sometimes even the beginning of July.

Myself, being the ardent cherry lover that I am, bought up the first decent looking bag of cherries I found on the shelf about a week ago – half expecting them to be a little lackluster in their sweetness and bite, but not caring because – CHERRIES!


 
Surprisingly, I was charmed and delighted by their perfection! These cherries were the archetype of what a cherry should be. Juicy and sweet, with just the right amount mouthwatering of bite. Never mind the $15 price tag that accompanied them.

So worth it. (Don’t tell my husband).

After eating my fair share, sitting out in the sun on our deck (talk about spring perfection), I set about finding ways to savor them a little bit more – tucking them into various recipe ideas where I knew their scrumptiousness would shine!

This chia pudding was the first thing I landed on.
