These olive oil fried eggs with a fresh herb and tomato salad are made with only a few ingredients and are legit a delightful dream of a real food breakfast! Or lunch, or dinner, if you’re the kind of person who could eat fried eggs for every meal #totallyme.
Fried eggs + salad = pretty much every weekend breakfast for me ever.
Okay maybe not every one ever… (case in point – I do sometimes go for pancakes, too). But it is my go-to, tried and true breakfast for whenever I have more time than to make a smoothie or grab a couple of hard boiled eggs.
So every Friday when I stock up my refrigerator for the weekend I alllllways make sure I have eggs and salad ingredients. It’s seriously the easiest most versatile breakfast that I am never not in the mood for. It’s healthy, quick, and very delicious (<– the most important things).
And while I don’t usually like to tell people what to do, I definitely think you guys should give the formula a try this weekend 😉 The beauty of it is in the delicious simplicity. Salad of your favorite seasonal ingredients + fried eggs is an equation that never tastes bad.
What’s up weekend?! I see you, and I’m ready for your late morning wake ups, freshly made coffee, record playing, and dancing in the kitchen while making savory breakfast pancakes with bacon and fried eggs.
Something about fall always makes me want to stay in and make weekend breakfasts at home instead of venturing too far out of the house for the first meal of the day – staying cozy inside wearing pajamas till noon and noshing on some seriously delicious breakfast just fits with all the fall vibes.
The recipe that I’m sharing with you today is perfect for that. Perfect for your epic (yup I said it) weekend.
To be clear, it’s not so much a recipe for the pancakes themselves (that part I’m going to let you use your favorite recipe for) but for what goes IN and ON them.
These are dressed-up-weekend-ready savory pancakes, if you will 😉
How is it already Monday, again?! I’ve been meaning to get this post out to you all for a little while, but I’ve needed some time to do stuff around the house that desperately needed my attention (read: the big office clean out!). The good news is the office is allllmost done, and I’ve finally found some time to sit my booty down at my newly clean desk (yay!) and write about this delicious scramble! I’m not sure what’s been in the air lately, but I’ve been super into quick and healthy scrambles. And this easy chorizo and asparagus scramble has been a frequent star at our breakfast show.
In truth, i’ve always considered myself to be much more of a fried egg person.
Do you have a strong preference one way or the other?
Fried is still usually the way that I order ’em when we go out for brunch (except for maybe the ham scramble at Rockcreek here in Seattle! It’s SO GOOD. I could eat those eggs every dang weekend).
But lately, at home, I’ve been into scrambles. Flavorful, veggie packed, healthy, easy breeezy scrambles.
