watermelon strawberry quencher {vegan + paleo}

I’m a little embarrassed to admit how long I’ve had this simple recipe floating around my summer. Landing itself after workouts, for friend-loaded-out-of-state-brunches, and introducing it to tequila before YOU!! It’s a shame, really. Not to mention the fact that the weather is already cooling down and we’re all thinking more about sweaters and soup (ahem like me, who’s going to be making one later today) than we are the necessity to cool the EF down IMMEDIATELY.

My timing may be a little off, but you’ll have to accept my sincerest apology. Because all of these reasons aren’t enough to keep my from introducing you to the summer beverage love of my life, – the watermelon strawberry quencher.

Watermelon strawberry quencher! The most hydrating watermelon drink you've ever had! Made with only fresh watermelon, frozen strawberries, and lime juice.

Literally a perfect summer drink – this watermelon strawberry quencher is icy cold, refreshing, hydrating, and sooo mega easy to make.

And has proved itself to be a hydration savior throughout the warmer months.

It got it’s start, when for some reason I decided in the middle of Seattle’s massive (for us, okay? Don’t judge me!) heat wave, I took up RUNNING. Running, guys! This is kind of a big deal for me.

Cuz for as long as anyone has known me I have been the professed “I will never be a runner” .. and “it’s just sooo boring” type of a lady. But then I discovered this awesome app called aaptiv, and things will never be the same. Hellllo endorphin high!

They create running, strength training, yoga and even meditation programs that are led by fitness professionals and backed with music to keep you motivated and up to speed. And with their help, running suddenly became… fun. Something I nevvvvver thought I would say. If you need a mix up in your exercise routine I definitely recommend checking them out.

And that’s how in the midst of the heat and sweat the crazy in me thought… why not sweat some more?

LOL GOOD IDEA, NYSSA. Until your face is beet red and you can’t stay hydrated to save your life.

At least not until you discover things like this watermelon strawberry quencher.

Also known as a icy blended beverage lovers dream.

Anyone else always game for a new and healthy make at home snack? If so, this post for oven baked sweet potato chips with dairy free ranch dip is made for YOU!

Healthy oven baked sweet potato chips with dairy free ranch dressing! A salty, crunchy and satisfying make at home snack that's loaded with anti-oxidants and healthy fats.

I will be the first to admit that I have something of an addiction to chips. Yep. They are definitely what I would consider to be my “snack vice”.

One of those things that you just don’t keep in the house unless you’re prepared for the inevitable gravitational pull to the cupboard. I have switched gears over the last several years to a more (ahem) “healthier” variety –  if you can actually ever call chips that. Think red and purple potatoes fried in either avocado or coconut oil – thus avoiding all the junky oils that chips are usually fried in. Not to mention all the other no bueno ingredients that are in all the bags that line an ENTIRE AISLE at the grocery store. Guess I’m not the only one with a weak spot for the crunchy salty fix.

Healthy oven baked sweet potato chips with dairy free ranch dressing! A salty, crunchy and satisfying make at home snack that's loaded with anti-oxidants and healthy fats.

On one recent trip to the store while I was reaching for my favorite bag of avocado oil chips, I heard a quote from Michael Pollan’s book “Food Rules: An Eater’s Manual” running through my head – “Eat all the junk food you want as long as you cook it yourself.”

Which, when you think about it really is a brilliant way of allowing you and your family to indulge in some of the treats you love, by making healthier versions of them, and without getting sucked into the convenience of these foods that are so prevalent in our food culture.

So with this philosophy in mind, I decided to forgo the packaged chip purchase and instead continue my pursuit of anti-oxidant rich, anti-inflammatory, blood sugar regulating, crispy sweet potato GOODNESS.

I knew from past experience that achieving crispy sweet potato nirvana is not an easy task. But sometimes, when things don’t turn out right the first time, you just have to research, try again (and again… and again… ) until you find success.

Oven baked sweet potato chips are definitely worth getting right.

They are loaded UP with all the antioxidant rich ingredients to fuel whatever activities you have planned for the weekend.

I hadn’t really gotten on the smoothie bowl train yet (I know I know… what have I been doing with my life?!), until after I started kicking my exercise routine up a notch over the last couple of weeks with the help of this awesome app called aaptiv. Have you guys tried it? It’s pretty life changing! It’s like having a personal trainer with you throughout your whole workout, with music that’s timed to the intensity of the run/strength train/yoga sesh. I’m not usually the most motivated runner – okay honestly I’ve NEVER even so much as liked running, but I have gone on TWELVE runs in the last two weeks!

Not like I’m counting or anything…

I might kinda feel like a rockstar?

I just never thought I would feel the way I do about running. Which says a lot for their program.

If you’ve been looking for something to turbo charge your at home or gym workout routine I would definitely recommend checking it out! There’s something about getting your body in motion that feels so GOOD.

So one thing that I’ve been trying to focus on in addition to getting my sweat on is fueling my body with the right stuff after the working out is done.

It’s a pretty important piece of the puzzle, right?

I made this smoothie base a couple of times post workout and it turned out so luscious and creamy. I was IN LOVE. And since it was on the thicker side I thought; let’s just go ahead and make this love official and turn it into a smoothie bowl.

Smoothie bowl = a smoothie that’s all grown up and has it’s life figured out.

This bowl knows how to get you glowing from the inside out, and in only 5 minutes!
