I am pretty sure Seattle is confused about what season it’s supposed to be (SPRING, SEATTLE. IT’S SUPPOSED TO BE SPRING!). Because the trees are blooming and the crocuses and daffodils have sprung up from their earthly depths but it was SNOWING last Friday, you guys. SNOWING. Like big wet flakes falling to the ground for at least two hours 🙄 I know we’re not the only one’s but it just makes me wanna say COME ON ALREADY.

So while at first I thought I might be a little too far past the cold weather season to share this recipe for the best paleo bean free chili, after this recent flash back to winter-like weather that we’ve been having around here I realized that no, it’s definitely not too late. In fact, this chili recipe is probably needed now more than ever. Because if we’re gonna have to deal with snow at the end of March, we might as well be eating delicious paleo bean free chili while we do it!

Easy Make Ahead Paleo Gravy {paleo + vegan option}

Woooo team gravy!

Is gravy not the best part of holiday meals? I mean, a good gravy can save just about any dish in need of some love – dry turkey, bland mashed potatoes, over baked stuffing. It’s like the little (DELICIOUS) miracle working angel of Thanksgiving and Christmas. Which is why I was so dang heartbroken when I gave up gluten, since most classic gravies are made with flour. But little did I know then that all hope was not lost. There are amazing gravy options to be had that do not involve any gluten or grains of any kind, like this easy make ahead paleo gravy!

It is here to fill that gravy shaped hole in your heart.

I’m sure I’m not the only one that would argue gravy to be their favorite item on the Thanksgiving (or Christmas! Or hearty mid-winter dinner!) table. Which is why I felt it was so important to get it right. And easy. Make ahead menu items can be such a game changer when it comes to planning big meals!

Unlike most gravies that are thickened with some type of flour (wheat or not), this gravy gets it’s body from puréeing caramelized onions, garlic, and a few cashews together into an aromatic infused broth.

what type of broth should you use for the gravy?

 

There’s really two main options:

  1. Homemade stock or bone broth (turkey, beef, chicken, mushroom or vegetable will all work!)
  2. Good tasting store bought broth

As one of the main ingredients of the gravy, you really want to start with something that tastes good. That being said, you don’t have to use a homemade stock or bone broth. I have made this gravy many times with store bought beef broth, chicken, or mushroom broth for a vegetarian version. Because you’re blending in some ever-so-flavorful and umami rich caramelized onions and garlic, and on top of that infusing the broth with aromatics, the store bought option will work just fine, as long as it’s a high quality option.

If you have some homemade stock or bone broth, definitely use it, as it will add another layer of richness and depth of flavor (AKA bringing your A game! 💯).

Even better – if you are making this gravy the day of the feast and making a turkey (which is totally do-able, it’s not that high maintanence), de-glaze your turkey roasting pan and incorporate some of the pan drippings to REALLY take it to the next level.

The Ultimate Bunless Burger {paleo + gluten free}

The ultimate bunless burger! For those nights when you just NEED a burger in your life. Paleo, guilt free, and super satisfying.

I mean, how excited would you be about dinner tonight if this ⬆️ is what you were coming home to?

Especially if it’s as easy as forming some patties, seasoning them, searing them and loading them up with your favorite toppings.

The ultimate bunless burger! For those nights when you just NEED a burger in your life. Paleo, guilt free, and super satisfying.

There’s something about a burger that is so dang comforting and familiar. Perfect October food. Especially when the rain is coming down like it has been in Seattle. Gray skies are in full effect around here.

I have to say – I reaaaally really missed burgers when I gave up gluten and transitioned to a mostly paleo diet.

Obviously there’s gluten free (and even grain free) bun options out there for those who can no longer enjoy fluffy brioche rolls – (😭 yes I do still mourn the loss of these foods from time to time! I think that’s perfectly okay, and even healthy. Recognizing the weight of the thing that you’re giving up for health benefits has the ability to further strengthen your resolve and commitment to your positive lifestyle choices! They definitely have the ability to exist simultaneously and work in direct relation to each other), but it did take me awhile to find the same joy in them as I used to find in a classic OG burger.

Occasionally I do splurge in the gluten free bread option for a burger, but more often than not, I choose the bunless or lettuce wrapped option. I just FEEL better when I don’t have all those carbs added to an already indulgent meal.

This ultimate bunless burger = all the flavors of a classic burger and none of that heavy stomach feeling that can really weigh you down

 

AKA a guilt free win/win.

And now I’m here to tell you that this bunless burger will rescue you from any remaining bun-missing feels.

And that you can easily make it at home.
