First, let’s talk bulletproof coffee.

I’ve been bulletproofing my mornings for at least a couple of years, but only recently did I start playing around with a variety of flavors to keep things interesting. Today’s particular bulletproof variety? Pumpkin spice – the flavor anthem of fall.

I’m not sure why it took me so long to jump on this pumpkin spice latte thing, but between the paleo iced pumpkin spice latte from last week and this warm and nourishing version, I can really see this whole PSL thing working out.

The recipe is pretty simple. It’s made with:

 

  • Your favorite hot coffee
  • Nourishing coconut oil
  • Grass fed ghee or butter – Can skip for a vegan version. If using, grass fed is the optimal choice – it’s higher in Omega-3 fatty acids, K2 (an important and under consumed fat soluble vitamin that acts as a partner for vitamins A,D, and calcium, allowing them to work better to support bone and heart health), and it’s higher in CLA’s (conjugated linoleic acid) which, among other things, is a great immune system booster.
  • Real pumpkin – Yes! Hello antioxidants!
  • Pumpkin pie spice
  • Vanilla extract
  • Sea salt
  • Natural sweetener of choice – this is actually totally optional, if you want a low sugar/carb version of this bulletproof latte leave out the sweet. Otherwise, for a more indulgent option add a little maple syrup (my favorite), coconut sugar or honey.

Ingredients

  • 12 oz hot coffee 
  • 1 tbsp coconut oil 
  • 1 tsp ghee (can omit for a vegan version)
  • 1 1/2 tbsp pumpkin puree 
  • 1/2 tsp pumpkin pie spice 
  • pinch of sea salt 
  • 1 tsp vanilla extract 
  • maple syrup or another natural sweetener to taste (optional)

Instructions

  1. Add all ingredients to blender and blend on high until frothy and emulsified.
  2. Pour into your favorite mug and take in the warm joy of pumpkin spice season!
